I know, you are asking what is potatoe patties???!!!!!
Well, they are a great way to use your left over mashed potatoes.
Works best cold, right out of the frig, just form into small patties.
Dip in egg
Roll in cracker crumbs
Fry in butter.
I like them topped with a little ketchup.
I hadn't had them since I was a kid, my Grandma use to make them and they are as good as I remembered.
Here is a photo of the Zucchinni and tomatoe skillet I have mentioned before.
Fry 3-4 pieces of bacon, drain the fat and set the crispy bacon aside.
Add sliced zucchinni to hot pan with a trace of bacon fat in. Add sliced onion.
When bzucchinni is browned, add 2 sliced tomotoes (or canned if you don't have fresh)
When warm throughout, sprinkle with your favorite shredded cheese, I use Montery Jack and sprinkle with a little garlic salt and oregano.
We are planning on some camping this week, so my menu has been formed around a campfire. But I did these some great deals in Fareway's ad whether you are camping or not. I thought I would let you know what my menu is though.
Saturday a.m. Muffins and coffee
lunch - Chili and peanut butter sandwiches
dinner - Hamburgers & sweetcorn
Dessert - Apple Crisp
Apples
3/4 c butter
3/4 C. dark brown sugar
1 1/4 c flour
1/2 c. quick oats
1 Tbsp. cinnamon
Sunday
Foil Breakfast
Place hashbrowns, eggs,(scramble egg mix) sausage and seasoning in foil and place on grill, could also do in skillet.
lunch - Bratwurst, cottage cheese and lays potatoe chips
dinner - Kabobs
Sirloin steak cut in cubes, place in ziplock baggie with italian dressing to marinade overnight. Soak skewers for 30 minutes in water. Chop vegatables in big chunks, peppers, cherry tomatoes, onion. Alternate meat with vegtables.
Dessert - Camp Pies
Butter bread and place face down on round pie iron. Add canned fruit pie filling. Put another piece of bread on toip of filling, with butter side out. Close iron tightly. Fry in campfire till nice and brown on both sides.
Monday a.m. Pancakes, Eggs and Bacon
lunch - Chili Dogs (using left over chili from Satuday lunch)
Have a great Labor day weekend!
Fill dutch oven with apples (peeled and sliced).
Combine brown sugar, flour, oats and cinnamon.
Cut butter into mixture.
Spread mixture over apples
Cover and cook about 45 minutes or until apples are soft
