Chili Recipe got rave reviews from the family!

Hearty Beef Chili
1-1 1/2 lb. bonesless chuck roast
1 Tbsp. olive oil
2 tsp. kosher salt
1 tsp. black pepper
1(16 oz)jar of pico de gallo, Pace
1 c. onion (I use 2 Tbsp. of dry onion)
1 package Chili seasoning packet
2 c. beef broth
1 can tomatoe paste
1 can chili beans

1. Rub roast with oil, sprinkle with salt and pepper.
2. Heat large skillet over meduim high heat. Sear meat on all sides.
3. Place roast in crockpot and pour the jar of pico de gallo over and top with onion.
4. Whisk together chili seasoning, tomatoe paste and beef broth. Pour over roast. Stir in 1 can chili beans(optional).
5. Cover and cook on low for 5-7 hours. Take two forks and shred roast and stir into soup. At this time, I also stirred in a couple tablespoons of flour and water mixture to thicken my chili, heat through and garnish with shredded cheese, green onion and sour cream.

Tonight I am serving left over spaghetti sauce that I froze from last week's meal, I just add one jar of boughten sauce if I think I need a little more. I bought a jar of spaghetti sauce from Aldi for $1.09, but since I already have such great flavor to my homemade sauce, you would never know I added it. Keep in mind for either of these recipes, when buying tomatoe paste, it's $.39 at Alid, it's $.69 for Fareway's cheapest brand, I don't notice a difference, ecspecially when using in these types of recipes. I also serve the three cheese garlic bread from Aldi for $1.64.

For dessert tonight is a new recipe for Chocolate Tiramisu Cups. I'll let you know the recipe tomorrow if we like it. Sure does sound good!
