Hot dogs

Italian steak parmesan, serve with pasta


Cube Steak Parmesan
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
2 tablespoons water
1/3 cup crushed saltine crackers
1/3 cup grated Parmesan cheese
1/2 teaspoon dried basil
3 tablespoons vegetable oil
4 (4 ounce) beef cube steaks
1 1/4 cups canned tomato sauce
2 1/4 teaspoons white sugar
1/2 teaspoon dried oregano,
divided 1/4 teaspoon garlic powder
4 slices mozzarella cheese
1/3 cup grated Parmesan cheese


Directions

Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.

Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.

Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.
 
 
Beer Butt Chicken
1 cup butter
2 tablespoons garlic salt
2 tablespoons paprika
salt and pepper to taste
1 (12 fluid ounce) can beer
1 (4 pound) whole chicken


Directions

Preheat an outdoor grill for low heat.

In a small skillet, melt 1/2 cup butter. Mix in 1 tablespoon garlic salt, 1 tablespoon paprika, salt, and pepper.

Discard 1/2 the beer, leaving the remainder in the can. Add remaining butter, garlic salt, paprika, and desired amount of salt and pepper to beer can. Place can on a disposable baking sheet. Set chicken on can, inserting can into the cavity of the chicken. Baste chicken with the melted, seasoned butter.

Place baking sheet with beer and chicken on the prepared grill. Cook over low heat for about 3 hours, or until internal temperature of chicken reaches 180 degrees F (80 degrees C).
 
 
 
Juiciest Hamburgers
I haven't tried these yet, but I am tonight!
2 pounds ground beef
1 egg, beaten
3/4 cup dry bread crumbs
3 tablespoons evaporated milk
2 tablespoons Worcestershire sauce
1/8 teaspoon cayenne pepper
2 cloves garlic, minced


Directions

Preheat grill for high heat.

In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.

Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

Spring Salad


I discovered a new salad recipe, just using stuff out of my frig and it really turned out yummy!

Spring Mix (bagged salad from Aldi's)
Apple (cut up in bite size pieces)
Walnuts
Feta cheese crumbles
croutons (southwestern ones from Aldi's)
Lemon Poppy Seed dressing (Kraft)

mmmmmmmm........mmmmmmmmmm  Try it!  The first one was so good, I had to refill my bowl and it was my lunch again today.  You could add a little chicken too if you wanted to fill yourself up a little more.

So with no awesome grocery store deals, what did I cook last week. 

Fajita's
Homemade noodles and chicken (using some of that .39 lb. hindquarters) served over mashed potatoes ***CHEAP meal***  homemade noodles are so good, easy and so cheap!
Spaghetti (leftovers in the freezer) Another good option from this week, buy most supplies at Aldis and sale on Garlic bread this week at Fareway.
Tenderloin Steaks & baked potatoes (tenderloins on sale previous week $4.99lb)
Fetticini Alfredo and sausage
Homemade pizza (sale on italian sausage previous week)
Pork steak with mashed potatoes (sales previous week on pork steak)

See, it pays to pick up those sale items and have them in the freezer or pantry.  I spent hardly any money at the grocery store last week, other than a few staple items and we ate good!

Fettucine and Shrimp


This Fettucine Alfredo and Shrimp was Excellent and quick and easy.
I did have quite a few pots going at the same time on the stove, but it was rather quick fixing.
I used the Sea Pack shrimp scampi, on sale this week at Fareway for $4.99
I used one box, but i was minus 1 person in my family, I probably will buy two boxes to feed everyone and we will each have a little more shrimp on our plates also, oh, never can have too much shrimp!
Prepare the shrimp and past according to instructions
To make alfredo sauce,
1 pint heavy whipping cream
1/2 cup butter
1 1/2 cups grated Parmesan cheese


Directions

In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese. Cook over medium low heat until smooth. Remove from heat. Sauce will thicken upon standing.

The next time, I would use the butter from the shrimp scampi in place of using new butter in my white sauce, rather than wasting it and I'm sure the flavor would be great.
You wouldn't even have to make the white sauce, the buttery sauce from the shrimp scampi would be enough.
I just poured a little of the white sauce over the fettucini and then topped with shrimp.
I served with garlic bread.
It was delicious!

Slow cooker Macaroni and Cheese & Hamburgers


2 cups evaporated milk
1/2 teaspoon paprika
1 teaspoon salt
1 egg, beaten
2 tablespoons butter
3 1/2 cups cubed Cheddar cheese
1 (8 ounce) package macaroni


Directions

Combine in slow cooker: evaporated milk, paprika, salt, egg, butter and cheese; stir. Cook on high for 1 hour.


Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.

Stir cooked macaroni into cheese sauce, reduce temperature to low and cook for 3 to 5 hours.

Cheesey Chicken Chowder


2 cans chicken broth
2 cups diced, peeled potatoes
1 cup diced carrots
1 cup celery
1/2 cup diced onion
1 tsp. salt
1/4 tsp. pepper
1/4 c butter
1/3 c all-purpose flour
2 c milk
2 c shredded cheddar cheese
2 c diced or shredded chicken

1. Bring chicken broth to boil in a large saucepan, reduce heat. Add potatoes, carrots, celery, onion, salt and pepper. Cover and simmer until vegetables are tender, about 15 minutes.
2. Melt butter in a medium saucepan.  Add flour, mix well.  Gradually stir in milk and cook over low hear until slightly thickened.  Stir in cheese and cook until melted.  Add cheese mixture to broth and vegetables along with chicken.  Cook and stir over low heat until thoroghly heated.

Campbells Healthy Skillet Herb Roasted Chicken

Ingredients

1/4 teaspoon ground dried sage leaves
1/4 teaspoon dried thyme leaves, crushed
4 skinless, boneless chicken breast halves
Vegetable cooking spray
2 cloves garlic, minced
1 (10.75 ounce) can Campbell's® Healthy Request® Condensed Cream of Chicken Soup
1/2 cup water

Parslied Rice:
4 cups cooked long-grain white rice
1 teaspoon chopped fresh parsley

Directions

Mix the sage and thyme in a small bowl. Sprinkle over the chicken.

Spray a 12-inch nonstick skillet with the cooking spray and heat over medium heat for 1 minute. Add the chicken and cook for 15 minutes or until the chicken is cooked through. Remove the chicken and keep warm.

Add the garlic to the skillet and cook until it's lightly browned. Add the soup and water and cook until the mixture is hot. Serve over the chicken with Parslied Rice.

Herb Roasted Pork Loin and Potatoes


6 medium potatoes, peeled and quartered
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1 1/2 teaspoons chopped fresh chives salt and pepper to taste
1 (4 pound) boneless pork loin roast
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste


Directions

Preheat oven to 350 degrees F (175 degrees C).

In a pot with enough water to cover, boil the potatoes for about 10 minutes. Drain, cool, and place in a bowl. Toss with olive oil, 1/2 teaspoon thyme, 1/2 teaspoon garlic powder, chives, salt, and pepper.

Rub the pork loin roast with 1 teaspoon thyme, 1 teaspoon garlic powder, and onion powder. Sprinkle with salt and pepper.

Place the roast on a rack in a shallow roasting pan, and cook 50 minutes in the preheated oven. Arrange the potatoes around the roast, and continue cooking 50 minutes, to an internal temperature of 160 degrees F (70 degrees C). Remove from heat, cover with foil, and let sit 15 minutes before slicing.

Iowa Pork Steak
Ingredients


2 tablespoons vegetable oil
4 pork steaks
onion powder
garlic powder
salt and ground black pepper to taste
1 large onion,
chopped 2 (4.5 ounce) cans sliced mushrooms, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10.75 ounce) can water
1 (1 ounce) package dry onion soup mix
1 tablespoon Worcestershire sauce

Directions

Preheat oven to 350 degrees F (175 degrees C).

Heat oil in a large heavy skillet over medium-high heat. Brown steaks for 3 to 5 minutes on each side. While browning, season both sides with onion powder, garlic powder, salt and pepper. Transfer steaks to a 9x13 inch casserole dish, and sprinkle with chopped onion and sliced mushrooms.

In a small bowl, combine condensed mushroom soup, water, onion soup mix and Worcestershire sauce. Mix until smooth, and pour over steaks. Cover pan with aluminum foil.

Bake in preheated oven for 90 minutes.

Chicken and Apple Panini


Ingredients
1 Arnold® 100% Whole Wheat Sandwich Thins® roll
4 oz. boneless skinless chicken breast
2 slices reduced-fat Swiss cheese
4 pieces apple (any variety), thin slices
1 tsp. reduced-fat mayonnaise
baby spinach leaves

Serving size: 1 sandwich

Directions
Pre-heat a nonstick griddle or skillet to medium. Grill each side of the chicken breast for 5–7 minutes. Spread one side of the Sandwich Thins® roll with reduced-fat mayonnaise. Assemble the sandwich by layering a slice of cheese, apples, chicken, baby spinach and the remaining slice of cheese. Grill the sandwich about 90 seconds on each side, weighing the sandwich down with a small skillet as it cooks.

Here's another idea, haven't tried this yet and honestly might omit the peanut butter and banana off, but you might like it.  I think the rest of sounds wonderful.

Ingredients
1 Arnold® Made with Whole Grain White Sandwich Thins® roll
1 pineapple (canned or fresh), thinly sliced
1 slice of country ham or 3 slices of turkey bacon
1 tbsp. of peanut butter (smooth or chunky)
1 banana, sliced
Serving size: 1 sandwich
Directions
Using a toaster oven, cook bacon or warm ham. Toast your bread and then add remaining ingredients to assemble your sandwich!

Sandwich thin used in place of hamburger bun


The night of my House Party, I also served BBQ pulled pork sandwiches, in which I used the Sandwich thins instead of buns.
Sandwich thins are an excellent substitution for a hamburger bun.  Healthier and less fattening!



Southwest Burger

Ingredients
1 Arnold® 100% Whole Wheat Sandwich Thins® roll
¼ lb. 96% lean ground sirloin
1 tsp. grill seasoning
1 tsp. fresh cilantro, chopped
1 tsp. scallion, chopped
½ slice reduced-fat pepper jack cheese
2 tsp. ketchup
hot sauce
sliced tomato, red onion, avocado and red leaf lettuce

Serving size: 1 sandwich
Directions
Pre-heat grill or non-stick skillet to medium-high. In a small bowl, combine ground sirloin, seasoning, cilantro and scallions and form into a patty about 1/2" thick. Grill patty 3–4 minutes each side. At the last minute of cooking, top patty with pepper jack cheese. Spread one side of the Sandwich Thins® roll with ketchup and sprinkle hot sauce to taste. Assemble sandwich by topping patty with sliced tomato, onion, avocado and lettuce.

*Recipe can be made by substituting lean ground turkey or veggie burger patty. Cook veggie patty according to package instructions and omit cilantro and scallions.

Ingredients
1 Arnold® Multi-Grain Sandwich Thins® roll
3 oz. smoked turkey, thinly sliced
1 slice cooked turkey bacon, cut in half
1 slice reduced-fat cheddar
1 slice reduced-fat Swiss
1 tsp. honey mustard
Sliced red onion, tomato and lettuce leaf

Serving size: 1 sandwich
Directions

Toast the Sandwich Thins® roll until lightly browned. Spread one side of the Sandwich Thins® roll with honey mustard. Layer on cheddar, turkey, bacon and Swiss, lettuce, onion and tomato and the other half of the Sandwich Thins® roll.

My alterations;  I put on all the ingredients and then put in the panini maker until cheese was melted!  Excellent sandwich!

Grape Tomatoe Bruschetta



Grape Tomato Bruschetta

Ingredients

4 Arnold® Honey Wheat Sandwich Thins® rolls, separated
2 pints grape tomatoes, sliced in half lengthwise
1 tbs. aged balsamic vinegar
2 tbs. garilc infused extra virgin olive oil
12 fresh basil leaves
Kosher salt, to taste
Freshly ground black pepper, to taste
Serving size: 2 bruschetta; Yield 8 bruschetta
Directions
Toast the Sandwich Thins® halves to a light golden brown. In a bowl, mix tomatoes with balsamic, olive oil, salt and pepper to taste. Stack basil leaves and roll them in the shape of a log. Slice the rolled basil, making ribbons. Toss most of the cut basil with the tomatoes, reserving a bit of fresh basil to garnish. Spoon dressed tomatoes on top of each toasted Sandwich Thins® half and garnish with a few fresh basil ribbons. Eat and Enjoy!

Here are my changes in this recipe:
I did not have garlic infused olive oil, so instead I used extra virgin olive oil and sprinkled it with garlic salt. 
I did not toast them first, I sprayed the olive oil on, then sprinked the garlic salt on, then with tomatoe basil mixture, I then topped with fresh shredded parmesean cheese.  I baked them at 350 degrees until cheese was melted.
They were a favorite!

I hosted a Sandwich Thins House Party


Arnold Sandwich Thins
There is a new program out, where you can apply to host a house party and the company sends you coupons for products if you invite guest to come to your house and market their product. 
This was my first experience and the product was these Sandwich thins.  Luckily I had been using the product since last summer and really liked them, so I was happy to share them with my friends.
My guest were invited over to sample the Sandwich Thins and recieved coupons, reusable grocery bags, recipe cards and grocery list pads.
If you haven't tried Arnold Sandwich Thins yet, you may want to try them, they are really good.  They are healthy and have many uses. I am including a few recipes in my next post, try the Arnold website to view more ideas on this product.
