Sorry for the lack of updates, I've been totally devoted to my son's Halloween costume.  So here is a quick note to let you know what is on my grocery list and menu.


Dinner #1
Breaded Pork Loins  5/$5 
Fresh Green Beans  $.69 lb.
Mashed Potatoes  Idaho Russet potatoes $1.29  5# bag

Dinner #2
Boneless Pork Shoulder Roast  $1.49 lb.
Southwest Pork Burritos
2 1/2 lb. pork shoulder roast
1 can diced tomatoes and green chiles undrained
3 Tablespoons tomatoe paste
1 Tablespoons honey
3 cloves garlic, finely chopped
1 Tablespoon chile powder
1/4 tsp. salt
12 Old El Paso Flour shells   or use the Ortega ones on sale
1. Place pork in slow cooker.
2. In blender, place tomatoes, tomatoe paste, honey, garlic, chili powder, and salt. Cover; blend on medium high speed for 10 seconds. stopping blender frequently to scrape sides.  Pour over pork.
3. Cover and cook on low setting 8-10 hours.
4. Remove pork from cooker, place on cutting board, shred pork with 2 forks, return to slow cooker and mix well.
5. Serve pork mixture on tortillas with topping; roll up.  Pork mixture will hold on low setting up to 2 hours.

Garnish with shredded cheese, sour cream, shredded lettuce and tomatoe.  All of these on sale;

Dinner #3
BLT's
Fareway Bulk thick sliced Bacon  $2.39 lb.
Shredded lettuce blends (mentioned previously, use that bag)

Add egg for protein and flavor
Fastco White or Wheat sandwich breads $1.19 loaf

Serve with cottage cheese  $2.49 24oz.

Dinner #4
Spiral 1/2 Ham   $1.99 lb.
Serve with cheesy potatoes (on last week's post, use the sale shredded cheese, sour cream)
Green Bean Casserole
Use left over ham for sandwiches



Dinner #4


Sirloin Tip Steak  $2.99 lb.

Broccoli   Crowns on sale $.99 lb.
1/4-1/2 Red Potato, sliced into small bites

Seasoning Mixture:
1/8 cup Olive Oil
1 1/2 TB Chopped Onion
1/4 Tsp Minced Garlic
1 Tsp Worsterchire Sauce
1/4 Tsp Soy sauce
1/4 Tsp Lemon Juice
A Dash of Black Pepper
A Sprinkle of Salt (Sea Salt - preferably)
Directions
Preheat oven to 400 degrees
For the seasoning mixture: In a small mixing bowl, combine Olive Oil, Salt & Pepper, Worstershire Sauce, Soy Sauce, Minced Garlic, Chopped Onion, Lemon Juice.
Place steak on center of foil sheet..
Place a small amount of the seasoning mixture to the steak, quickly turn the steak over.
Sprinkle Salt & Pepper on the steak, and then place potatoes and carrots on the steak, top with the remaining seasoning mix.
Carefully fold the foil into a "packet"..
Place packet on cookie sheet..
Roast in oven for 1 hour - reducing heat to 350 after 30 minutes.
At this time, take the steak packets out of the oven, carefully open them, to check the progress..
You will probably want to return them to the oven for another 30 minutes at this point.
Remove from oven, let set for 10-15 minutes, or until ready to serve!

1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1/2 cup crushed gingersnap cookies (I used graham crackers and then just sprinkled a little ginger in)
1/2 cup finely chopped pecans
1/2 cup cold butter or margarine

Filling
2 packages (8 oz each) cream cheese, softened
1 cup sugar
1 cup canned pumpkin (not pumpkin pie mix)
2 tablespoons Gold Medal® all-purpose flour
1 tablespoon pumpkin pie spice
2 tablespoons whipping cream
2 eggs

Toppings
1/3 cup chocolate topping
1/3 cup caramel topping

1. Heat oven to 350°F. In large bowl, stir together cookie mix, crushed cookies and pecans. Cut in butter, using pastry blender or fork, until mixture is crumbly. Reserve 1 cup mixture for topping. Press remaining mixture in bottom of ungreased 13x9-inch pan. Bake 10 minutes. Cool 10 minutes.

2. Meanwhile, in large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth. Add remaining filling ingredients; beat until well blended. Pour over warm cookie base. Sprinkle with reserved topping.

3. Bake 35 to 40 minutes or until center is set. Cool 30 minutes. Refrigerate about 2 hours or until chilled.

4. Before serving, drizzle with chocolate and caramel toppings. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

I served mine with homemade whipped topping also;
1/2 c. heavy cream (whipping cream)
3 TBsp. confectioners sugar

Mix with hand mixer until it forms peeks, Mmmmmm....yummy

Chicken & Dumplings  (Mmmmmm good and EASY) I doubled the recipe for my family
3 cups of chicken  (I boiled the whole chicken(or hind quarters work well) and then picked off the bone OR if you want real easy, buy a Rotisserie Chicken and pick off the meat)
1 can cream of chicken soup (10 3/4 oz)
1 cup of chicken broth (I use bouillin granules, so much cheaper and always on hand)
1 cup whole milk
1/2 tsp. dried thyme
1/4 tsp. pepper
1 cup Bisquick baking mix (or Aldi's baking mix)
1/8 tsp. pepper
1/3 cup whole milk
If you have chicken left over, make chicken salad sandwiches for lunch, or chicken tacos.

1. In a large saucepan, combine chicken, soup, broth, 1 cup whole milk. thymer and 1/4 pepper.  Bring to boil, stirring occasionally over medium high heat.
2. In a medium bowl, combine baking mix, 1/8 tsp. pepper and 1/3 cup milk, stirring just until moistened.
3. Drop dough, 1 spoonful at a time, into boiling chicken mixture.  Reduce heat to low and simmer, uncovered for 10 minutes.  Cover and simmer for 10 minutes longer, or until dumplings are done.

Garlic Braised Beef
8 small red potatoes, cut in half
8 cloves of garlic
3 lb. Rump Roast
1 envelope garlic and herb dry soup mix
1 can beefy mushroon soup
Carrots, cleaned and cut in 2" pieces

1. Place potatoes on bottom of crockpot.  Place beef on potatoes.  Sprinkle with dry coup mix, pour soup over all.  Add carrots around roast.
2. Cover and cook on low heat for 8-9 hours.     Use juice from crockpot for gravy.

Oven Beef Stew (yes you can put it in the crockpot also)
1/4 c flour
1/4 tsp salt
1/4 tsp. pepper
1 1/2 lb. stew meat
1 Tbsp. vegtable oil
3 garlic cloves, presssed
3/4 tsp. thyme
1 can beef broth (I use beef bouillin or soup base)
1 can stewed tomatoes
1 medium onion ( I use dry onion flakes0
2 large unpeeled potatoes (sliced small)
2 c carrots
1/2 c frozen peas   (If you are short on time, use canned carrots and peas, sometimes I add lima beans also)

Preheat oven to 350 degrees.  Combine flour, salt and pepper.  Add beef.  Cover bowl with lid and shake to coat beef (or put in ziplock baggie)  Heat oil in skillet, press garlic in, add beef, reserving remaining flour mixture.  Cook until meat is browned, stirring occasionally.  Remove beef and garlic to oven safe bowl or pot,  sprinkle with thyme, and flour mixture.  Add beef broth, tomatoes, onion, sliced potatoes, carrots and peas.  Cover and bake for 1 hour or until beef and vegtables are tender.

Baked Pork Chops From Allrecipe.com
Ingredients:

6 pork chops
1 teaspoon garlic powder
1 teaspoon seasoning salt
2 egg, beaten
1/4 cup all-purpose flour
2 cups Italian-style seasoned bread crumbs
4 tablespoons olive oil
1 (10.75 ounce) can condensed
cream of mushroom soup
1/2 cup milk
1/3 cup white wine

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste. Place the beaten eggs in a small bowl. Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
3. Heat the oil in a medium skillet over medium-high heat. Fry the pork chops 5 minutes per side, or until the breading appears well browned. Transfer the chops to a 9x13 inch baking dish, and cover with foil.
4. Bake in the preheated oven for 1 hour. While baking, combine the cream of mushroom soup, milk and white wine in a medium bowl. After the pork chops have baked for an hour, cover them with the soup mixture. Replace foil, and bake for another 30 minutes.

Swiss Steak and Cheezy Potatoes
amounts are a littel vague on this recipe, it is a old one, handed down
1 1/2 lb. minute steak
Garlic
2 1/2 c tomatoes or 1 can diced tomatoes
1 Tbsp, worchestershire sauce
celery, chopped (I leave out)
Onion (or onion flakes)

Roll steak in flour and brown
Lay in roasting pan and layer onion on top(sprinkle onion on top) then diced celery (1 cup) Sprinkle with garlic.  Cover with tomatoes and 1 TBsp. warchestershire sauce
Bake at 325 degrees

Cheezy Potatoes
1 2lb. bag of hashbrowns (or diced potatoes)
1 stick butter
1 can cream of chicken soup
1 pint of sour cream
1 onion (or onion flakes)
8 oz. shredded cheddar cheese
garlic salt.
Mix all ingredients together in a big bowl, then spoon into 9x13 pan, bake at 375 degrees for 1 hour and 15 minutes or until hot and bubbly.

Recipes for week of October14th sales ad


Taco Pasta Casserole
2 lbs. hamburger
garlic ( I used garlic powder)
onion (I used onion flakes)
1 jar spaghetti sauce
1 envelope of Taco seasoning
1 can refried beans
1 lb. medium shell pasta (I had macaroni, so that's what I used)
1 can tomatoe paste
Velveeta cheese
shredded cheddar cheese
Toppings all optional - lettuce, taco doritos, sour cream

Brown hamburger in a half cup of water with chopped onion and garlic, add taco seasoning(don't add more water) Boil noodles for 8 minutes; combine and then add the canned goods.  Layer in a large casserole pan or split it into two pans and freeze one(I buy those disposable foil pans with lids, works great in freezer and doesn't tie up your pans then) I put a layer of velveeta in the middle and top the casserole with shredded cheese.
Bake at 350 degrees for 30 minutes or until cheese is browned and bubbyly.  Top with lettuce, crushed doritios and sour cream.  I serve mine with garlic bread, a salad would also be good.

Golden Porkchops
6 Porkchops
1/4 tsp season salt (Lawrys)
1/4 tsp pepper
1 onion (I used onion flakes)
1/2 c. fresh sliced mushrooms (if you like mushrooms, you can omit these)
2 cans of golden mushroom soup

Preheat oven to 375 degrees.  Sprinkle both sides of chops with season salt and pepper, lay in pan and sprinkle chopped onions on top and mushrooms; them pour soup over.  Cover and bake for 30 minutes (45 for thicker ones) then uncover and continue to bake another 15 minutes.  (Porkchops are done when internal temperature is 160 degrees F)
I serve with mashed potatoes and gravy.  You can use the soup mixture from the pan for gravy, if it's not thick enough, just pour in pan and add a little thickening, bring to boil and simmer until it's reached the constistancy you like, I add a couple TBsp of flour to about a cup of milk for my thickening)
Serve with a vegetable like grean beans and philsbury dinner rolls.

Chicken & Rice Bake
4-6 Bone-in Chicken Breast
1 can cream of mushroom soup
1 can milk
1 cup minute rice
1 packet dry onion soup mix

This can be put in oven or crockpot
Lay rice on bottom of pan; Lay chicken on top of rice.  Sprinkle chicken with dry onion soup mix.  Mix soup and milk and pour over chicken.  Crockpot on low for 8 hours or oven on 350 degrees for approximatley 1 hour.

Honey and Herb Roasted Turkey Breast
(I may have already posted this recently, but it was good)
1 (4-5 lb) Turkey breast
2 Tbsp. homey
1 Tbsp. parsley blend (I just used Parsley)
1 Tbsp. garlic spice blend
1/2 tsp. salt
1/2 tsp. pepper
1 cup chicken broth
1. Preheat oven to 325 degrees.  Spray pan with non-stick spray. 
2. In a small bowl, combine honey, parsley, garlic, salt and pepper.  (Mine was kind of like a paste) Place turkey in pan and Spread honey mixture over the turkey breast; pour chicken broth over top.
3.  Bake at 325 degrees for 1 hour, cover loosley with foil and bake another hour.  I suggest using a meat thermometer inserted into thickest part of breast, turkey is done when the internal temperature is 170 degrees.

I like to serve this with mashed potatoes and gravy, using the drippings from the roast or even purchasing canned turkey gravy.  But here is another option for you;
Mashed Potatoes Casserole
4 1/2 c water, divided
2 1/2 c whole milk, divided
5 Tbsp. butter, divided
1 (4.8 oz) box sour cream and chives instant mashed potatoes
1/2 c bacon bits (real not dried, can use Oscar Mayer pre-packaged)
1 (4.9 oz) box scalloped potatoes

1. Preheat oven to 400 degrees, spray a 2 quart baking dish with non-stick spray
2. In medium saucepan, combine 2 cups water, 2 cups milk and 3 Tablespoons of butter.  Cook over medium high heat until mixute starts to boil.  Remove from heat and add instant mashed potatoes, stirring until blended.  Stir in bacon bits, and spoon mashed potato mixture into prepared dish. 
3. In medium saucepan, combine remaining 2 1/2 cups water, 1/2 cup milk and 2 tablespoons butter.  Cook over medium high heat just until mixture starts to boil.  Add scallop potatoes, stirring until combined.  Cover and reduce heat to medium low and simmer for 10 minutes.  Uncover and simmer for 5-8 minutes longer or until sauce thickens slightly.  Carefully spread scalloped potatoe mixure over mashed potatoes.
4. Bake at 400 degrees for 15-20 minutes or until bubbly and starts to brown.

Serve with squash for vegetable and philsbury dinner rolls.

Acorn Squash
I place in microwave for 5-7 minutes to soften so that I can cut in half much easier.  Then cut in half, clean out seeds.  In the hole of each half of squash, I lay a strip of bacon, cut in half and 2 Tablespoons of brown sugar and bake for 30-40 minutes.  Clean inside out of squash, stir in a little butter and more brown sugar if desired, sprinkle with nutmeg.

Chili and Cornbread
I'm sure everyone has a chili recipe or two, but here's one if you need a new one.  I like to sometimes put my chili in a big pot and cook in oven, but a crockpot is an excellent way to cook chili also.

2 lbs. hamburger (I sometimes substitute the hamburger or use a combination with stew meat)
4 garlic cloves
2 TBsp. chili powder
1 1/2 tsp. dried oregano
3/4 tsp. ground cumin
3/4 tsp salt
1/4 tsp. pepper
2 cups onion
2 cups green bell pepper
3 cans diced tomatoes, undrained
2 cans tomatoe sauce
1 can kidney, pinto or black beans, drained and rinsed
If I cook in crockpot, I substitue a can of tomatoe paste rather than sauce to thicken, or if your family doesn't like the diced tomatoes, use tomatoe juice.
Brown hamburger first, then add rest of ingredients.
Preheat oven to 350 degrees and bake 2 1/2 hours or in crockpot on low 8 hours.
Serve with corn bread muffins, sliced open, buttered and sprinkle with cheddar cheese!

Spaghetti and Meatballs
1 pound lean ground beef

1 cup dry bread crumbs
2/3 cup milk
1 egg
2 cloves garlic, minced
2 onions, finely chopped
1 teaspoon salt
1 teaspoon dried parsley
1/8 teaspoon black pepper
2 tablespoons olive oil
2 (10.75 ounce) cans condensed tomato soup
2 (10.75 ounce) cans water
2 tablespoons lemon juice
1/2 teaspoon salt
1 teaspoon dried parsley
1/2 teaspoon dried basil leaves
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper

DIRECTIONS

To make meatballs: Combine in a bowl ground beef, bread crumbs, milk, egg, garlic, onions, salt, parsley and pepper; mix well. Roll into 1 inch balls and set aside.

Heat oil in large skillet over medium heat; add meatballs and cook gently so they stay whole and are lightly browned.

To make the sauce: Mix together tomato soup, water, lemon juice, salt, parsley, basil, sage, thyme and cayenne pepper in a large saucepan, add meatballs and simmer for 1 hour.
Serve with Garlic Bread or philsbury's bread sticks.

English Muffins and sausage links for breakfast OR
Fast English Muffin Pizzas
4 English muffins, split

1/2 cup canned pizza sauce
2 cups shredded mozzarella cheese
16 slices pepperoni sausage

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).

Place the English muffin halves cut side up onto a baking sheet. Spoon some of the pizza sauce onto each one. Top with mozzarella cheese and pepperoni slices.

Bake for 10 minutes in the preheated oven, or until the cheese is melted and browned on the edges.

Homemade Granola


Homemade Granola


2 1/2 c. Old fashioned Oats (not quick oats)

3/4 c. wheat germ

3/4 c. brown sugar (optional, I use splenda's brown sugar)

1/2 tsp. salt

1 tsp. lemon or orange zest, vanilla or almond extract, cinnamon or nutmeg

1/2 to 1 c. chopped nuts

2 Tbsp. cooking oil

1/2 c honey

6 Tbsp. water divided

Combine in large bowl: oats, wheat germ, brown sugar, salt and nuts.
Cook to boiling in small saucepan:2-3 Tablespoons water, honey and oil.
Add spices, zest and extract flavoring.
Reduce heat and simmer 3 minutes
Pour over oat mixture reserving about 1/3 cup honey mixture.
Toss to coat.
Sprinkle onto sprayed cookie sheet
Bake at 275 degrees for about 30 minutes, stirring after 15
Remove from oven and cool for a few minutes.
Return mixture to original mixing bowl
Add 2-3 Tablespoons of water, remaining honey mixture. Toss to mix
Sprinkle onto cookie sheet
Bake 15 minutes at 325 degrees. Cool
Store in airtight container.

From these fresh apples to . . . . . . .



Fresh Homemade Apple Crisp!




























Apple Crisp Recipe
4 cups of diced apples
1/2 c sugar
2 tsp. vanilla
1 tsp. cinnamon and nutmeg
I lay my apples in pan and cover with the ingredients, then stir to coat evenly
Then mix the following ingredients togther for topping;
1/2 c sugar
1/2 c flour
3/4 c quick oats
1/2 c. butter (softened)
Blend with fork, spread on top of apples
I use a 9x9 baking dish for this size of recipe. Bake at 375 degrees for 40 minutes or until golden on top.
I often double it and put in a 13x9 pan, you will have to increase baking time up to about an hour.
I serve mine topped with icecream or whipped topping.
Boston Cream Pie
1 round yellow cake layer (8 or 9 inch)
1 c cold milk
1 pkg(3.4 oz) Jell-O vanilla instant pudding
1 1/2 c. thawed cool whip whipped topping
1 square Baker's Unsweetened Baking Chocolate
1 TBsp. Butter
3/4 c powdered sugar
2 TBsp. cold milk
1. Cut cake layer into 2 layer with serated knife. Beat 1 c cold milk and pudding mix with whisk 2 minutes. Stir in whipped topping. Let stand for 5 minutes.
2. Stack cake layers on serving plate, spreading pudding mixture between layers.
3. Microwave chocolate and butter on HIGH for 1 minute, stir until chocolate is melted. Add sugar and 2 TBsp. milk, mix well. Spread over cake. Refrigerate 1 hour.
This cheesecake recipe is out of this world!!!!! My family loves it. They don't know it yet, but it's dessert tonight, I know they will be happy. I got it from all recipe.com http://allrecipes.com/Recipe/White-Chocolate-Raspberry-Cheesecake/Detail.aspx, but have tried it a few times and my family loves it everytime.
White Chocolate Raspberry Cheesecake
1 cup chocolate cookie crumbs
3 tablespoons white sugar
1/4 cup butter, melted
1 (10 ounce) package frozen raspberries
2 tablespoons white sugar
2 teaspoons cornstarch
1/2 cup water
2 cups white chocolate chips
1/2 cup half-and-half cream
3 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
3 eggs
1 teaspoon vanilla extract


DIRECTIONS
In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan.
In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

Recipe 1 Chicken Fried Steak with Cream Gravy

From Sandra Lee Semi-Homemade, October/November 2009Makes 4 servings
Ingredients




  • 1 sleeve saltine crackers, crushed

  • 1 cup all-purpose baking mix, Bisquick®

  • 1/2 teaspoon ground black pepper

  • 1/4 teaspoon salt

  • 1/4 teaspoon garlic powder

  • 2 large eggs, lightly beaten1/

  • 4 cup whole milk

  • 4 cubed steaks

  • 1/4 cup vegetable oil

  • 2 tablespoons all-purpose flour

  • 2 1/4 cups whole milk

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper
    Directions
    In a shallow dish, combine crushed crackers, baking mix, 1/2 teaspoon pepper, 1/4 teaspoon salt, and garlic powder. In another shallow dish, combine eggs and 1/4 cup milk. Dip cubed steaks in egg mixture, and dredge in cracker mixture.
    In a large skillet, heat oil over high heat until it reaches 350°. (Do not use a nonstick skillet.) Fry cubed steaks, in batches, in hot oil for 2 to 3 minutes on each side, or until done. Remove steaks, and drain on paper towels, reserving 2 tablespoons drippings in skillet.
    Add flour to hot drippings in skillet. Cook, stirring constantly, for 2 minutes, or until flour is browned and fragrant. Gradually add 2 1/4 cups milk, and cook, stirring constantly, until mixture thickens slightly. Stir in 1/2 teaspoon salt and 1/2 teaspoon pepper. Serve gravy over steaks.

Recipe 2 Oven-Fried Pork Chops (shown here with red potatoes or you serve with baked)

Makes 4 servings
Ingredients

1/2 cup all-purpose baking mix, Bisquick®

1/2 cup Italian-style panko (Japanese bread crumbs)

1/4 cup all-purpose flour

2 large eggs, lightly beaten

4 boneless, center-cut pork chops

1/4 teaspoon salt

1/4 teaspoon ground black pepper
Directions
Preheat oven to 425°. Place a wire rack on a baking sheet; spray rack with nonstick cooking spray.
In a shallow dish, combine baking mix and panko. In 2 separate shallow dishes, place flour and eggs. Sprinkle pork chops with salt and pepper. Dredge pork chops in flour; coat in egg, and dredge in baking mix mixture. Place pork chops on prepared rack. Bake for 20 to 25 minutes, or until done.

Roasted Red Potatoes

Ingredients

1 (20-ounce) package red potato wedges

Simply Potatoes®

1/4 teaspoon ground black pepper

1/4 teaspoon dried basil

2 tablespoons extra-virgin olive oil
Directions
Preheat oven to 425°. Spray a roasting pan with nonstick cooking spray.
In prepared pan, place potatoes in a single layer. Sprinkle evenly with pepper and basil; drizzle with olive oil, tossing to coat.
Bake for 20 to 25 minutes, or until potatoes are lightly browned.


Buttery Green Beans

Ingredients

1 (16-ounce) package trimmed fresh green beans

2 tablespoons butter

Salt and pepper to taste
Directions
In a large microwave-safe bowl, microwave green beans according to package directions. Add butter, tossing to coat. Add salt and pepper to taste.

Recipe 3 Garlic Braised Beef and Potatoes ( I put this one in the crockpot, you can even prepare the night before, store in frig and then just plug in the next morning)

8 small red potatoes

8 cloves of garlic

3 lb. beef roast

1 envelope of garlic-herb dry soup mix (I do have problems getting this at Fareway, I stock up when visiting QC stores, it is really a good one)

1 can condensed beefy mushroom soup

2 cups of broccoli ( can add like recipe says or serve with melted velveeta cheese on top)

1. Place potatoes and garlic in slow cooker, then beef. Sprinkle dry soup mix over beef, pour beefy mushroom soup over all.

2. Cover and cook on low for 8-9 hours

3. Add broccoli and increase setting to high, cover and cook about 15 minutes or until tender.

Recipe 4 Ham Steak with Red potatoes and cream of peas

Cook hamsteak in pan on stove, while cooking make your creamed peas and red potatoes as follows


1 pound baby red potatoes, quartered
1 cup shelled English peas
1 tablespoon butter
1 tablespoon all-purpose flour
salt and pepper to taste
1 cup milk

DIRECTIONS
Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes and peas to the sauce; simmer for about 5 minutes, stirring often. Serve immediately.

Recipe 5 Turkey Panini and Soup

Panini's are pretty easy to make and you can add whatever you want on each one. I simply spread mayo on inside of bread, layer with turkey, cheese of your preference and anything else you want to add. Drizzle the outside with olive oil and place in panini maker or in frying pan, making like you do your grilled cheese sandwich.

Serve with soup

Crockpot Round Steak recipe
INGREDIENTS
3 potatoes, peeled and quartered
1 onion, chopped
6 carrots, peeled and sliced into 1 inch pieces
2 pounds boneless round steak
1 (1 ounce) package dry onion soup mix
1 (10.75 ounce) can condensed cream of mushroom soup
3/4 cup water
DIRECTIONS
Place the potatoes, onion, and carrots in slow cooker. Cut steak into six pieces, then place the meat on top of vegetables. In a mixing bowl, combine the soup mix, soup, and water; pour over beef.
Cover, and cook on Low for 7 to 10 hours.

Round Steak and Gravy
1 1/2 pounds thin cut round steak
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed French onion soup
1 (10.75 ounce) can water
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Trim the fat from the steak, and cut into desired number of servings.
In a roasting pan over medium high heat, sear both sides of the steak, about 1 minute per side. Remove from heat.
Stir the cream of mushroom soup, French onion soup and water into the roaster. Bake in the preheated oven 2 1/2 hours.

Gravy and biscuit mixes at WonderBread store are really good. I passed on the news about the coupon last week at the Wonder Bread store, this week it's $2.00 off a $8.00 or more purchase. The coupons are available at the store, just ask at the counter, I believe the lady at the counter said the coupons are also in Harry's Wooden Nickel.
I have found these gravy mixes to be really good, I use the country gravy mix when making biscuits and gravy and the country chicken one when doing chicken fried steak. The cheddar and herb biscuit mix was also very good.
They also have sugar free cookies at the Wonder store, so using this coupon is a great way to save a little on those, since they are so expensive. I don't believe there is a limit, so you could go in more than once this week to take advantage.

Photo of the the Beef and Broccoli Stew. It turned out great and was very quick and easy. I served mine with rice noodles on top. It was actually more like eating Chow Mein that stew I though. I am going to run to Fareway on Monday and buy a couple more of those Hormal beef packets to have on hand, stick in the freezer, for a quick, easy, yummy dinner. Even my friends that have no time to quick, have time for this one!

Italian Pot Roast
2 Tbsp. vegtable oil
1 (2-2 1/2 lb) Chuck Roast
1 tsp. salt
1 tsp. pepper
1 c. beef broth
1 c. dry red wine
1 1/2 tsp. Italian seasoning
1 small onion, halved and quartered
2 bay leaves
4 medium carrots, cut into 1 inch peices

1. Preheat oven to 325 degrees
2. Heat oil in oven safe pot over medium high heat. Sprinkle roast with salt and pepper. Add roast to pan, cook for 5-8 minutes, turning to brown on all sides. Stir in broth, wine, Italian seasoning, onion and bay leaves. Cover tightly.
3. Bake at 325 degrees for 1 1/2 hours. Add carrots and bake 1 hour longer or until tender. Remove and discard bay leaves. Serve over rice, if desired.

Two New Soup Recipes
My family loved the new chicken and rice vegtable soup and it was super easy.

Chicken and Rice Vegtable Soup
1 Tbsp. butter
1/2 c. chopped onion ( I used 1 Tbsp. dry onion flakes, kids don't notice it in there)
2 (32 oz) chicken broth
1 can cream of chicken soup
2 1/2 cups of shredded chicken
1 (16oz.) frozen mixed Vegtables (or whatever you have)
1 (5.7 oz) packet chicken flavored rice sides, Knorr
1/2 tsp. salt
1/2 tsp. pepper
In large heavy pot, melt butter over medium high heat and add onion, cook 5 minutes stirring occasionally. Add broth and soup, whisking in combine. Stir in chicken, vegtables, rice, salt and pepper. Cook, stirring occasionally, over medium high heat for 15 minutes.

Beef and Broccoli Soup (I actually haven't made this one yet, but have everything to do it and wanted to tell you now because the Hormal beef packets are buy one, get one free at Fareway right now, and since they are $5.99, you want to take advantage of that, I just froze the extra one)
5 cups of beef broth
3/4 c. sour cream
1 (1-ounce) package of teriyaki seasoning (in oriental isle)
1 (4.7 oz) package of teriyake noodles, Knorr Asian Sides
1 c. sliced frozen carrots
1 (1 lb) package of beef roast au jus, shredded, Hormel (over by lunchables in cooler)
1 (16oz) package of frozen broccoli
1/8 tsp. salt
1/4 tsp. crushed red pepper

In large pot, combine broth, sour cream and teriyake seasoning. Bring to boil over medium high heat, reduce heat to medium low, add noodles and cook for 5 minutes. Add carrots, beef roast, broccoli, salt and crushed red pepper. Cook for 2 minutes longer, serve immediately.

Honey-and-Herb Roasted Turkey Breast
1(4-5 lb) turkey breast
2 Tbsp. honey
1 Tbsp. parsley
1 Tbsp. garlic spice blend (I used Pampered Chef's garlic, garlic, reduced it to 3/4 tsp.)
1/2 tsp. salt
1/2 tsp. ground black pepper
1 C. chicken broth

Preheat oven to 325 degrees. Place turkey on rack in a roasting pan, I do not have one, so I just put it right in a casserole dish. (Spray with non-stick cooking spray)
2. In a small bowl, combine honey, parsley, salt and pepper. (It's pretty thick and pasty) Rub outside of turkey evenly with it. Pour chicken broth into bottom of pan.
3. Roast at 325 degrees until meat therometer reaches 170 degrees, otherwise about 1 1/4- 1 1/2. Remove turkey from pan and let stand 15 minutes.

I served with mash potatoes and gravy and corn. Oh, also some Rhodes rolls drizzled with Agave Nectar(or honey). Yummmy! Sorry, I forgot to take a picture, the vultures attached too soon! (my family, of course)
