The Corn and Chicken chowder was yummy.

12 oz. skinless boneless chicken breast halves or chicken thighs
4 fresh ears of sweet corn
1 32 oz. container reduced-sodium chicken broth
1 small green sweet pepper (1/2 cup)
1 C. milk
1 1/4 cups instant mashed potatoe flakes
Salt and pepper
Crushed red pepper (optional)

I placed the ears of corn, chicken and broth in pot and brought to a boil and then simmered about 12 minutes (It called for using a double boiler, but I don't have one)
Remove chicken and corn.
Add green pepper in broth. Stir in milk and potato flakes. Shred chicken and return to pot. Heat thoroughly. Season to taste with salt and pepper and crushed red pepper.

I served with warm french bread, Fareway $1.94 loaf, wrap in foil and place in 350 degree oven about 10 minutes. Quick and easy dinner. I also bought boneless chicken thighs at Aldi's, 3 lb. for $3.49

Good Morning to you all, so far it has turned out to be a beautiful day, no rain yet, as we had been forecasted. Anticipation to the dreary day, I went out and picked a bouquet of flowers from my yard this morning, to add a little brightness to the house.


It's best to pick your flowers in the morning and use scissors rather than just pulling. You may think you don't have what you need to make a beautiful bouquet, but most of all of you do, in fact. As you will see, hosta's, ornamental grasses, clips from your spirea bushes, wild geranium, all make excellent arrangements.




Use the larger flowers toward the base of your arrangement, and smaller flowers for the longer in the middle or back of your arrangement. Spirea and hosta's both make great filler at base. Believe it or not, even some weeds look great in arrangements! Always make a fresh cut off the end of the flowers as you are putting it in your vase, to aid in longevity. Oh, and you do not have to have a fancy vase, a pop bottle or sparkling water bottle work great!



The Sandwich Basket

I want to share with you something that is working great for me, just a little organization tip, to save you time. This is my sandwich basket. I put everything that we use to make a sandwich in it and store it in the frig this way. I have mayo, cheese and my deli meats in mine and when I have leftover chicken or steak to go in sandwiches, I even put it right in there also, so we don't forget to use it. (Saving money in the long run, not forgetting about leftover meat in the frig that gets lost in the back) It's been working out great, it saves me time having to go back to the frig two or three times to get what I need, or most cases, forgot! Every night when I pack Jeff and Drew's sandwiches, I just grab the basket and when finished, just place everything back in the basket and then in the frig. I bought the basket at Wal-mart for under $2.00. Any container would work, I would suggest something washable and with some type of handle.

Another thing I put in their lunches, is Yogurt parfaits, the ones like at McDonalds. I layer vanilla yogurt(bought in a 32 oz. container at Alid for $1.59) strawberries, blueberries and lately I add a few raspberries, because they are in season and are a $1.99 at Fareway. I put some the granola in a ziplock for them to add, so it doesn't get mushy. They are delicious! And healthy!!!!!

I have found a lot of my ideas by surfing the web and reading articles in magazine, they certainly are not all my creations alone, but I hope that some of you are getting some good tips. Please feel free to share some comments on this blog, I would love to hear your feedback, to see if anyone is getting good ideas from my blogs.

Just a few more tips while I'm thinking of it. I have a little grocery diary, I have taken past grocery reciepts and have staple grocery items with price and from what store which they were bought. It makes me aware of what I am spending for items, so that I know when there really is a good sale and that I also have an idea of what it cost to make a recipe. It's not worth making something that I have to go out and buy so many things that I will never use the rest of the items in other recipes. I have been guilty of that a few times. I will try to make sure that I am passing on recipes that are such. Everyone's family is different and what works for some, may not work for others. Good Luck!

All you have to do is look at the ads and you can tell we are still in the full swing of summer. Fareway's ad again this week is advertising steaks, the greatest grilling meat there is.
Boneless beef chuck roast $2.39 lb. Well, here it is, I'm going to give away my secret to the best French dip I've made.
3 1/2 - 4 lb chuck roast. I add a couple tablespoons of olive oil to a frying pan on high heat and while I am waiting for that to heat up, pretty hot(starting to smoke, but not burn) I completely cover the whole roast with Italian seasoning. When the oil is hot, I sear every side of the roast, even the ends.
Then I mix the following ingredients:
1/2 c. soy sauce (less if it's a new bottle, it's stronger when first opened, decrease)
1 beef bouillin cube
1 bay leaf
3-4 peppercorns
1 tsp. dried rosemary, crushed
1 tsp. dried thyme
1 tsp. garlic
I now put the seared roast in the crockpot and cover with the mix, add enough water so that it comes to the top of the roast. Cook all day on low heat (7 hrs) About an hour before, or whenever the roast is near done, take two forks and pull the meat apart.
I serve the meat on french rolls, warmed in the oven, just enough to make the outside a bit crunchy. Add a little bowl of the juice with your sandwich to dip it in.
We always have cheesy potatoes with it, a family favorite.
Boneless Top of Iowa Sirloin Steak is a good steak for the money. I suggest you marinade it for additional tenderness.
Boneless butterfly pork chop. Excellent summer sandwich. I like to get them thin enough to put on a bun. I season them and slather on BBQ sauce at the end. If you wrap the sandwiches in foil, they will stay warm for quite awhile. I sometimes pack these for the baseball game, serve wtih chips, which Fastco chips are on sale for .88 cents. Ipersonally don't buy chips anywhere but Aldi's, unless it's a really good sale. Aldi chips are great and your family will never know the difference if you don't tell them. Disguise them in a different bag, if you have to!
Sara Lee 100% classic wheat bread. Ugh!!!! Let me tell you, this doesn't mean whole wheat!!!! Be careful of labels, but the good whole wheat bread. My kids weren't happy at first, but before I knew it, they were asking for the GOOD bread, we like Amana whole wheat bread from Fareway. I started using the breads with my panini maker, which kind of toast it, so they couldn't tell it was a little darker, now they love it.
Panini maker was a great purchase by the way. I bought ours last summer, I was grasping at straws trying to make the kids a good lunch that they would actually eat. It turned out a great investment. You can even use stale bread and they are great. I buy fresh deli meat, never packaged lunch meat, it's full of fats and perservitives. You can really add some spice and so many options.
Easy Panini's Feel free to add veggies, lettuce, tomatoe, peppers, onion, etc.
Turkey deli meat
2-3 slices of cooked bacon
Cheese (of your chose)
BBQ sauce
Turkey, ham and sliced salami or those little pepperoni's
Mayo
Cheese
Slice left over steak, real thin, into strips
Sautted mushrooms
Provolone or swiss cheese
(sautted onions would also be great)
Breakfast Sandwich (I learned this one while remodeling our kitchen)
Again I am using the good whole wheat bread
Sausage patty (Aldi's Appleton Pork Sausage Patties, original in the freezer dept. $3.49 2lb)
(these little patties are really good, you cook in micro for 60 seconds)
Egg patty I add about a TBsp. margarine or butter in a glass bowl, melt, add 1 egg and a little milk, micro, stirring once.
Top with provolone cheese and then put in your panini maker just enough to melt cheese and toast bread, it's great and EASY!
It's Sweetcorn season, who can resist the yummy sweetness of our shortlived vegtable. If you have some left from a meal, simply wrap in saran wrap and then you can just throw in micro about 40 seconds to reheat. I'm working on a corn soup tomorrow, I'll let you know how it turns out.
Just a few other money saving tips
I always buy my milk from Aldi, It's $1.49 a gallon, the cheapest around and isn't any different from Dean's or Swiss Valley. It all comes from the same cow, just a different label. I talked to a truck driver once who told me that when he would pick up his milk shipment that they would ask for what store and then put the label on. You are only paying for the label.
I will be adding more about how great powdered milk is for you and sharing some recipes next month.

Only the ones, hi-lighted in red, do I suggest are the good deal, the other's may be cheaper at Wal-Mart this week, that ad to follow Walgreens and a few more items a little cheaper from Target. You may not get down to Target, so use prices from Walgreen's and Wal-Mart. Remember, don't get caught up buying all your supplies now and at one store, if you take your time picking things up here and there you will get the best deals and save more. Carry your school list in your purse and each week mark off the items. I'm marking the price next to each item, so that I can add up and see how cheap I shopped for school supplies this year.

End of the Summer Chili Pot and corn bread muffins was on the menu tonight. I thought it was pretty tasty, but I have to admit, the kids like regular chili better. But this chili is a great way to get some more vegtables in their diet.

End of the Summer Chill
2 TBsp. olive oil
1 lb. hamburger, ground turkey or pork(I used hamburger)
1 red onion (didn't have red onion, used yellow onion)
3 cloves garlic, chopped
1 zuchinni, chopped (their cheap at Aldi's)
1 red bell pepper, chopped
2 chilis (didn't have any, so I did have a jar of jalepeno's, so I chopped a few of those)
Salt and Pepper
3 ears corn, kernals scraped off
2 Tbsp. chili powder
1 Tbsp. sweet smoked paprika (I only had regular paprika)
1 12oz. beer
1 28 oz. can Fire roasted tomatoes
2 TBsp. fresh parsley(used dried, reduced to 1 Tbsp.)

1. In a large heavy pot, heat the olive oil, over medium-high heat, until smoking, add beef and cook, stirring, breaking up until browned. Stir in onion, garlic, zucchini, bell peppers, and chili's, season with salt and pepper. Stir in corn, chili powder and paprika. Cook until veggies are tender, 6-7 minutes.
2. Stir in beer and cook until reduced slightly, thyme and tomatoes, cook until slightly reduced, about 5 minutes.
The recipe also said you could turn off heat and then add juice of lime or grated peel, I actually forgot, but use your judgement on that.
To serve, top with cheese and scallions

Using zuchinni made me think of one of my favorite ways to prepare zucchini. I got the basic recipe from my Mother-in-law and have made a few alterations. It is so yummy.

1. Fry about 6 slice of bacon, drain grease reserving a couple tablespoons in pan. Set bacon to the side to cool. After it has cooled, crumble.
2. Cut up zucchini and 1/2 onion and fry in bacon grease intil browned, don't use too much grease or the zucchini will become soggy, but enough not to burn.
3. After zucchini and onion is brown, add 2-3 diced tomatoes (can use canned, but fresh is better) Heat until warm, add crumbled bacon
4. Top with shredded cheese.
I serve this with hamburgers or grilled chicken breast. Great for those of you who have gardens.

My youngest son, LOVES ramen noodels, so knowing he would not eat the chili, I prepared ramen noodles, changing it up a bit.
2 Tbsp. olive oil, heat
1 bonesless chicken breast, cubed, cook until no longer pink
Add
2 carrots, chopped
1 1/2 TBsp. Onion flakes
1 garlic clove (use powder if you don't have fresh)
Salt and Pepper
Seasoning packets from 2 Ramen noodles, 5 cups water
Bring to boil, reduce heat, simmer 15 minutes
Break noodles into small pieces and stir into soup, cook on medium for 3 minutes.
Add a bit of parsley before serving.
Dawson liked it and it was a way to add some veggies and meat, protien!

My boys love steak and after trying the Boneless New York Strip, it's all we buy now. Here are some tips on preparing your steak: Season the night before (or right when you get home from grocery store, 2 days won't hurt, or the morning of the dinner you plan of having them is fine also) What I season mine with: Montreal steak seasoning (or like spice), garlic powder, pepper, drizzle with a little olive oil and store in container or ziplock bag. Lay steak out on counter before cooking so that it will be room temperature before cooking (this really makes a difference) I suggest like an hour before. Sear quickly to lock in juices, during the searing process on each side, turn your steaks a quarter of turn to make grill marks crisscross, this seals the juices in. Then turn down on low and allow to cook to your desire. I serve bake potatoes with mine, you can even micro them and they are good. Sauted mushrooms are great with it. too. Try puttin your musrooms on scewers on the grill. Easy meal, with no kitchen mess!!!!!! Maybe you can even get your husband to do the grilling while you sit and relax, watching him cook!
Have leftover steak, well here's some ideas on what to do then.
Panini sandwich; slice the steak into really thin strips, top with sauted mushrooms(maybe even left over) and provolone cheese, drizzle a little ranch dressing and grill(panini) Yummy lunch! You may even get a phone call from your husband after lunch after this sandwich.
Add leftover steak to a salad, or after cutting into thin strips(if it's still on the pink side, not good if too well done), toss with a little fajita seasoning, heat olive oil in pan and stick meat in just to warm.
Ribs
Season ribs with the following:
1 Tbsp. brown sugar
1 Tbsp. paprika
1 tsp. garlic powder
1 tsp. celery salt (or celery seed)
1/2 tsp. dry mustard
1/2 tsp. ground black pepper
1/4 tsp. cayenne pepper
Rub on both sides of ribs, place in crockpot with a can of beer, cook on low 4-5 hours.
2 c. hickory smoked wood chips
For atleast 1 hour before grilling, soak wood chips in enough water to cover, drain.
For sauce:
In medium saucepan, cook;
1 medium onion and 2 cloves of garlic in 1 Tbsp. of hot butter
Stir in;
1 c. ketchup
1/4 c. molasses(use honey if you don't have molasses, it will work also)
1/4 c. cidar vinegar
1/4 c. water
2 Tbsp. brown sugar
1 Tbsp. chili powder
1 Tbsp. yellow mustard
1 Tbsp. worchester sauce
1/2 tsp. salt
Bring to boil, Reduce heat and simmer for 20-25 minutes ( I have used an old saucepan and done this over the hot coals on grill instead of inside)
Sprinkle wood chips over medium coals in a charcoal grill. Place ribs on the grill rack directly over the coals. Grill covered, for 10 minutes or until ribs are browned, turning once and brushing occasionally with sauce. (for gas grill, preheat grill. Reduce heat to medium. Add wood chips, place ribs on grill rack, grill as directed above) After this, I put the ribs in a pan and smothered with more of the sauce and then put my pan on a brick and shut the lid, so they would just simmer a little and allow the smokey flavor and seasonig to soak in. Serve with remaining sauce.
Takes a little time, but sooooo worth it when you eat them!!!!!!
I serve with seasoned fries
Fries with Barbecue Shake
1 bag of 28 oz. fries (small size/shoestring even)
1/2 tsp. brown sugar
1/2 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. celery salt
1/8 tsp. cayenne pepper
Prepare french fries according to package directions
Combine ingredients and sprinkle barbecue shake over hot fries and toss to coat.
Recipes from Spring 2009 Grilling Magazine, I have made a couple little changes that are above.
Ground Turkey
Sometimes I even mix ground turkey and hamburger for more flavor. Turkey burgers are great warmed up because they retain their moisture better than hambuger.
Mediterrane Turkey Burger
1 lb. ground turkey
1/2 c. crackers(ritz)
1/2 10 oz. package of spinach, thawed and drained or fresh spinach
1/3 c. chopped onion
2 Tbsp. dijon mustard
1/4 tsp. salt
4 oz. mozzarella cheese
1/4 c. roasted red pepper(bottled, drained and cut or fresh just sauted)
Comine turkey with spices and grill, top with cheese and red peppers.
Slow Cooker Macaroni and Cheese (recipe from allrecipes.com It's yummy! Use the healthy harvest pasta or Fareways large macaroni noodles.
INGREDIENTS
2 cups evaporated milk
1/2 teaspoon paprika
1 teaspoon salt
1 egg, beaten
2 tablespoons butter
3 1/2 cups cubed Cheddar cheese
1 (8 ounce) package macaroni

DIRECTIONS
Combine in slow cooker: evaporated milk, paprika, salt, egg, butter and cheese; stir. Cook on high for 1 hour.
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
Stir cooked macaroni into cheese sauce, reduce temperature to low and cook for 3 to 5 hours.
Bone-In chicken breast
My family loves barbecued chicken on the grill. Season your chicken a little, my favorite is Weber's Kicken Chicken, just sprinkle a little and grill, when chicken is almost done, brush barbecue sauce. Sweet!!!!! Serve with Sweet Corn and fresh green beans.
Green Beans
Have you ever had fried green beans at Friday? Oh, are they good, if you are interested, I have the recipe.
Chicken Salad Piccata ( I haven't tried this one yet, but just found it in the new Rachel Ray Magazine and thought it sounded good, let me know if you try it)
1 1/2 lb. small red potatoes, quartered
1/2 lb. green beans
1/4 c. olive oil
2 Tbsp. coursely chopped capers(or chopped green olives)
1/4 c. chopped flat leaf parsley
Grated lemon peel and juice of 1/2 lemon
Salt and Pepper
1 large egg
1/4 c. flour
Two 6 ounce skinless, boneless chicken breast halves
1/4 c chicken broth
In a large saucepan, add teh potatoes and enough salt water to cover by 1 inch. Bring to boil and cook until almost tender, about 10 minutes. Using a slotted spoon, transfer to a colander. Add green beans to the boiling water, and cook, stirring for 2 minutes. Drain in the colander with potatoes, let cool slightly.
In a large bowl, whisk together 1/4 c. olive oil. 1 Tbsp. capers and 3 Tbsp. parsley, the lemon peel and half the lemon juice. Add the potatoes and beans and toss, season with salt and pepper.
In a shallow bowl, beat the eggs, in another bowl, season the flour with salt and pepper. In a large non-stick skillet, heat the remaining 2 Tbsp. olive oil over medium heat. Coat the chicken breast with the seasoned flour, then dip in egg, allowing any excess to drip off, and coat with the flour again, shaking off the excess. Add to skillet and cook, turning once, until golden brown about 8 minutes. Transfer to cutting board and cut into strips.
Add the chicken broth to the skillet, cook over medium heat, scraping up any brown bits. Remove from heat and stir in the remaining 1 Tbsp. capers, 1 Tbsp. parsley and lemon juice. Top the salad with the chicken and drizzle with the pan sauce.
As per Rachel, this recipe cost $9.00, $2.25 for a family of 4.
Boness Loin Chops
Another recipe I just found but haven't had a chance to cook yet, but I took advantage of the pork loin sale a couple weeks back and plan to try this one out.
Beer-Brined Pork Loin Chops
4 boneless pork loin chops 1 1/2 thick
1 3/4 c. water
1 3/4 c. stout(dark beer)
3 Tbsp. coarse salt
2 Tbsp. mild flavor molasses (honey should work if you don't have molasses, but they are good to have on hand and keep)
2 tsp. coarsely cracked black pepper
4 cloves garlic
1. Place chops in resealable bag. For brine, in a large bowl, combine water, stout(beer), salt and molasses, stir until salt dissolves. Pour stout over chops, seal bag. Marinate in refrigerator for 8-24 hours, turning bag occasionally.
2.Drain chops, discarding brine, pat chops dry with papertowels. In a small bowl, combine pepper and garlic. sprinkle pepper mixture evenly over both sides of chops, rub in with fingers.
For a charcoal grill, arrange medium-hot coals around a drip pan in a grill with a cover. test for medium heat above pan. Place chops on the grill rack over pan. Cover and grill for 30-35 minutes or until chops are slightly pink in center and juices fun clear(160 degreesF)turning once half way through. (For gas grill, preheat grill, reduce heat to medium, adjust for indirect cooking, cover and grill as directed above)

Granola Recipe


2 1/2 c. Old fashion oats (not quick oats)
3/4 c. wheat germ
3/4 c. brown sugar
1/2 tsp. salt
1 tsp. lemon or orange zest
1 tsp. vanilla or almond extract, cinnamon or nutmeg
1/2 to 1 c. chopped nuts
2 TBsp. cooking oil
1/2 c. honey (or agave nector)
6 TBsp. water, divided

Combine in a large bowl: oats, wheat germ, brown sugar, salt, nuts.
Cook to boiling in small saucepan: 2-3 Tablespoons water, honey and oil.
Add spices, zest and extract flavorings.
Reduce heat and simmer 3 minutes.
Pour over oat mixture. Toss to coat.
Sprinkle onto sprayed cookie sheet.
(keep mixing bowl handy for later)
Remove from oven and cool a few minutes.
Return mixture to original mixing bowl.
Add 2-3 Tablespoons water, remaining honey mixture. Toss to mix.
Sprinkle onto cookie sheet.
Bake 15 minutes at 325. Cool

Store in airtight container

Well, I went to Walgreen's and stocked up on the school sale items. I only bought the cheap items, like the .09 and .39 cent items. That's the key. Don't get caught buying all your school items at the same store, they may be higher on other things and don't take your kids! With the money you save from their basic supplies, you can then let them chose the new backpack.


Remember, most of us who have elementary age students need to buy boxes of kleenex too, they are .89 until July 25th. Scotch tape is .39, think of wrapping presents, Christmas is coming! You will want to grab an ad when you walk in the door, because not everything is marked on the shelves with the sale price. Fareway's new circular doesn't come out until Wednesday or Thursday. But there are some current deals worth shopping for.

This is a great time to buy your hamburger meat. Just package it into smaller packages when you get home.

Today is such a icky day, what a great day to make chilli and then with the leftovers, have chilli dogs tomorrow for lunch. I am going to try a new chilli recipe today, I will let you know how it turns out.

Strawberries
Strawberries are great this time of the year. At .99 lb, stock up. Wash them, lay them on a cookie sheet to freeze, then bag, they are great for smoothies.
Yogurt Parfait
Layer yogurt with layers of strawberries and blueberries and top with granola. The granola recipe to come soon also. Sweet!!!!
Easy, Easy, Easy. Simply buy the shortcakes from Aldi or Fareway and top them with strawberries, we love a little milk poured over them, the cakes sop it up and makes them yummy, top with a little cool whip! Sweet!!!!
Strawberry Smoothie
1 c. yogurt
1 c. frozen strawberries
1 c. ice
add milk to make desired consistancy
Extra's that make the smoothie great and healthy
1 tsp. agave nectar(or honey), oatmeal, flax seed, banana, blueberries, powdered eggs
