Barbecue Ribs and Coleslaw

This menu was based on what was on sale at our local Fareway store, on my grocery list this week was:
Baby Back Pork Ribs $2.49 lb
Skinless Chicken Breast $1.79 lb.
Boneless Beef Chuck Roast $1.99 lb.
Chicken Cuts 2/$5 or other chicken deli meat
Coleslaw mix $.99 8-14 oz.
Tomatoes $.99 lb.
Lays Potatoes Chips $1.88
Betty Crocker Angel food cake mix 2/$3
Watermelon $2.99 each
Oscar Meyer Bacon 2/$5

Other items not on special this week that you may need among other ingredients;
Coleslaw dressing
Zuchinni
shredded cheese
Mexican rice
Hashbrowns
Strawberries ($1.99 at Aldi)
Cool whip

Perfect Grilled Chicken
1 c. Kraft Sun dried tomatoe dressing (or Italian dressing)
8 small boneless chicken breast
Grill to medium heat. Pour dressing over chicken in large resealable plastic bag. Seal bag, turn to evenly coat chicken with dressing. Refrigerate 5 min. to marinate. Remove chicken from marinade; discard bag and marinade.
Grill chicken 5-7 min. on each side or until cooked through (165 degrees) Refrigerate 4 of the breast overnight.

The next night; Fiesta Chicken Enchiladas
Shred teh leftover grilled chicken for the filling and add salsa, cream cheese and seasoning.
1 small onion
1 clove garlic
4 cooked chicken breast
1 cup thick n' chunky salsa, divided
4 oz. cream cheese, cubed
1 Tbsp. chopped cilantro
1 tsp. ground cumin
1 c. shredded cheddar and Monterey jack cheese
8 flour tortillas
Preheat oven to 350 degrees. Heat large skillet sprayed with cooking spray on medium heat. Add onions, garlic, cook and stir 2 min. Add chicken, 1/4 c. of the salsa, the cream cheese, cilantro and cumin, mix well. Cook until heated through, stirring occasionally. Add 1/2 c. of shredded cheese, mix well.
Spoon about 1/3 c. of the chicken mixture onto each tortilla, roll up. Place seam side down in 13x9 sprayed pan. top with remaining 3/4 c. salsa and remaining 1/2 c. shredded cheese.
Bake 15-20 minutes.

My kid's favorite summertime lunch!

Corn dogs .50 from Fareway's meat department with seasoned fries

I deep fry these outside to keep the mess and smell outside and not in my kitchen. When the fries are hot, I sprinkle them with garlic salt, parsley, salt and pepper.



This week on my Fareway list was;
Rump Roast $1.89 lb.
Whole bone-in Pork loins, cut into 2-2 1/2 lb roast, rest chops
80% Ground beef 10 lb. tubes, have it packaged any way you wish
Solid head of lettuce .79
Whole seedless watermelon $2.99
Broccoli bunches $1.49
Green Peppers 3/$1.00
Sour cream .59
Blue Bunny Ice Cream Pail $4.99
California White Peaches $1.49 lb
Kellogg's cereal $1.99


Recipes for this week;
Pulled-Pork Fajitas
2 1/2 lb. pork boneless loin roast
1 medium onion, thinly sliced
2 cups barbecue sauce
3/4 c. Old El Paso thick 'n chunky salsa
1 Tbsp. chili powder
1 tsp. ground cumin
1 bell pepper (can use frozen)
1/2 tsp. salt
Flour tortillas
Shredded cheese
Guacamole or sour cream if desired
1. Place pork in slow cooker, place onion on top, mix barbecue sauce, salsa, chili powder and cumin, pour over pork and onion.
2. Cover and cook on low heat 8-10 hours
3. Remove pork from cooker, place on cutting board, shred, using 2 forks. Return to cooker adn mix well. Stir in green peppers(cooked if raw, otherwise frozen) and salt. Increase heat setting to high, cover and cook for 30 minutes or until mixture is heated and vegtables are tender.
4. Using slotted spoon to remove pork mixture from cooker, fill each tortilla, top with cheese, guacamole and sour cream.
I serve with Mexican rice, Rice a Roni, also on sale at Fareway for .99



Garlic Braised Beef and Potatoes
8 small red potatoes
8 cloves garlic
3 lb. rump roast
1 envelope of garlic and herb dry soup mix
1 can beefy mushroom soup
2 c. broccoli
1. Place potatoes and garlic in slow cooker. Place beef on potatoes, sprinkle with dry soup mix, pour beefy mushroom soup over top of all.
2. Cover and cook on low setting for 8-9 hours.
3. Remove beef from cooker, place on cutting board, cut beef into slices.
4. Serve with steamed Broccoli.


Southwest layered salad
6 c. lettuce
1 can black beans, drained and rinsed
1 can whole kernal corn, drained
1/2 c. Thick'n Chunky salsa
1/2 c. Cheese crumbs (or shredded cheese)
1/2 c. Ranch dresssing
1 c. broken tortilla chips
1. Place lettuce on serving platter
2. Cover with layers of beans, corn, salsa and cheese
3. Drizzle with dressing


Pork Chops
Sprinkle Lawry's seasoning salt until both sides of chop are completely covered. I leave mine to marinate overnight. Grill.
Serve with Cucumber salad and fresh sliced tomatoes.
Refreshing Cucumber Salad
2 small cucumbers
1 large tomatoe
1/2 small red onion
3 TBsp. mayonnaise
1 TBsp. while vinegar
1/4 tsp. salt
1/2 tsp. pepper
Cut up cucumbers, tomatoes and onion, toss with mayo, vinegar, salt and pepper. Cover and refrigerate atleast one hour before serving.
Serve your vanilla Blue Bunny Icecream with fresh sliced peaches. I slice my peaches an hour before and sprinkle with spenda.
Watermelon is also a great after dinner treat!

Breakfast Casserole



9 eggs, beat lightly

3 slices of shredded bread

3 c milk


1 1/2 lb. sausage, browned


1-1 1/2 c cheese(2 cups)

3 tsp. salt

grease 13x9 pan, also can add other veggies, like mushrooms, sweet red peppers, ham, onion. Cover and Refrigerate overnight. Bake at 350 degrees for 1 hour and 10 minutes







Peanut butter and jelly sandwiches are a good choice for school lunches, Aldi's has peanut butter on special for $1.29 and jelly $1.19, along with White Bread for .79 Now that's cheap lunches!

Best deals and recipes for this week, August 5th at Fareway

Blueberries $1.39 lb
Let me share a favorite of our's
Berry Easy Cobbler
1 1/4 c. all purpose flour
1/2 c. sugar
1 1/2 tsp. baking powder
3/4 c. milk
1/3 c. butter or margarine (melted)
3 c. fresh blueberries
1/3 c. sugar
In a medium mixing bowl, combine flour, the 1/2 c sugar and the baking powder. Add milk and melted butter, stir until combined.
Spread the batter in a greased 8x8 baking dish. Scatter blueberries evenly over batter. Sprinkle with remaining sugar.
Bake the cobbler in a 350 degree oven for 40-45 minutes or till a toothpick inserted into the cobbler comes out clean.
Serve the dessert warm with whipped cream.

Okay, now that we have dessert out of the way, we can get down to business, first things first!

Boneless Sirloin Top Steaks are $2.49 lb., our choice of steak.
Try cutting up some pototoes(red potatoes $1.98 5 lb bag) and onion( yellow onion .49 lb) and placing in a foil pack to add to the grill. (if you are wanting to speed up the cooking of the potatoes a little, cook them half way in the micro, then cut up and put in foil pack and then on grill)

Boneless Skinless Chicken Breast 3 lb. bag $4.99 Also great on grill, brush a little barbecue sauce on at the end.

Serve cottage cheese ($.69) on the side topped with a few slices of fresh peaches($.88 lb)

Left over chicken and/or steak, serve fajita's the next night.

There's some deals at Walgreen's this week that you may want to take advantage of. Remember, you have to pick up the ad and search a little, they do not advertise the deals on the shelves most of the time.

Kelloggs cereal is 2 for $5, then when you pay, you will get a $2 coupon to use off your next purchase. Remember it's Free Mocha Monday at McDonald's stop by and get your free mocha tomorrow morning!
August is officially State Fair month and doesn't your mouth water to think of the yummy fair food, but oh, the prices! Well, our family has been making lemonade shake-ups for quite a long time now and are they good, hate to brag, but better than the fair's.


Lemonade Shake-ups
4 lemons
2 oranges
2 cups sugar
4 quarts water


This works great if you have the pampered chef stir pitcher, but if not try using a potatoes masher in a pitcher. I slice the lemons and oranges really thin, add the sugar and then squeeze the juice out with the masher part of pitcher. If you are not going to serve right away, I suggest taking the peel's off, otherwise the lemonade takes on the taste of the rhine.


Good Corn dogs
Fareway's Meat Department has good corn dogs, they are 2 for $1. They tast just as good as the fair's if you deep fry them, and hot dogs are not green!!!!!


Yummy Fries
We like to use the Waffle fries, but just regular fries work well also.
Prepare according to package instructions, then upon taking out of oven, sprinkle with garlic, season salt, dry parsley and pepper. Dip in ranch dressing. An easy way to add a little spark to your fries.
