Chocolate Tiramisu Cups
I learned a few things making these, but this have to easier than the actual cake. A few steps in preparing, but not bad.
1(8oz.)package of cream cheese, softened
3/4 c. confectioner's sugar
2 Tbsp. unsweetened cocoa powder
1 cup heavy cream, divided
3 Tbsp, coffee liquer, divided, Kahlua
3/4 c. espresso or strong brewed coffee, cooled to room temperature
1(3oz) package of soft lady fingers( I could not find soft, so I soaked mine)
3 Tbsp. confectioner's sugar
Garnish: Cocoa powder

1. In medium bowl, combine cream cheese, 3/4 c sugar and cocoa powder. Beat at medium speedd until smooth. Add 1/2 cup heavy cream and 2 Tbsp. coffee liquer, beating until blended and smooth.
2. In a small bowl, combine espresso and remainig 1 Tbsp. coffee liquer.
3. From here is where I changed the recipe since I couldn't find the soft lady fingers, I put my lady fingers in a bowl and poured the espresso and liquer liquid over them to soak up, they do not need to be completely soaked, just soft, then I lined the bottom of the cup with the lady fingers, then about 1 1/2 Tbsp. on cream cheese mixture, continue to layer until you leave enough room at top for whip cream, about 3 layers, having a layer of cream cheese on top.
4. In a small bowl, combine remaining 1/2 c of heavy whipping cream and 3 Tbsp. of sugar. Beat at high speed with an electric mixer until soft peaks form. Spoon whipped topping on the top of cream cheese mixture.
Garnish with additional cocoa powder. Store covered in frig until ready to serve.
Maybe not quite as good as Rubino's, but was good.
As you can see, I put mine in little coffee cups, parfait dishes would also work great. Enjoy!

Hy-Vee Bottom roast $2.99lb (little less quality)

Fareway's homemade Pork sausage $1.69lb.

Purnell's Sausage Rolls $1.99 a pound tube (found in freezer)

Turkey Breast $1.39lb.

Stew beef $2.99 (I would just cut up the arm roast, but if you are short on time, this would be easier)

Hamburger Helper $.99, if you go to fareways site and click on coupons or http://www.coupon.com/, there is a coupon for $.75/3, making these only $.75 each, then add the $1.79 ground chuck and you get a pretty cheap meal.

Chili Recipe got rave reviews from the family!

Hearty Beef Chili
1-1 1/2 lb. bonesless chuck roast
1 Tbsp. olive oil
2 tsp. kosher salt
1 tsp. black pepper
1(16 oz)jar of pico de gallo, Pace
1 c. onion (I use 2 Tbsp. of dry onion)
1 package Chili seasoning packet
2 c. beef broth
1 can tomatoe paste
1 can chili beans

1. Rub roast with oil, sprinkle with salt and pepper.
2. Heat large skillet over meduim high heat. Sear meat on all sides.
3. Place roast in crockpot and pour the jar of pico de gallo over and top with onion.
4. Whisk together chili seasoning, tomatoe paste and beef broth. Pour over roast. Stir in 1 can chili beans(optional).
5. Cover and cook on low for 5-7 hours. Take two forks and shred roast and stir into soup. At this time, I also stirred in a couple tablespoons of flour and water mixture to thicken my chili, heat through and garnish with shredded cheese, green onion and sour cream.

Tonight I am serving left over spaghetti sauce that I froze from last week's meal, I just add one jar of boughten sauce if I think I need a little more. I bought a jar of spaghetti sauce from Aldi for $1.09, but since I already have such great flavor to my homemade sauce, you would never know I added it. Keep in mind for either of these recipes, when buying tomatoe paste, it's $.39 at Alid, it's $.69 for Fareway's cheapest brand, I don't notice a difference, ecspecially when using in these types of recipes. I also serve the three cheese garlic bread from Aldi for $1.64.

For dessert tonight is a new recipe for Chocolate Tiramisu Cups. I'll let you know the recipe tomorrow if we like it. Sure does sound good!

Crispy Parmesan Chicken Strips
My kids love these and they are real easy and economical
1 1/2 c seasoned croutons, crushes ( I buy these from Aldi, $1 a bag, I put the measured amount in a large ziplock and then use rolling pin to crush)
1/3 c. Parmesan cheese, grated (I use the kind in the can, but you can use fresh also)
1 tsp. dried parsley
1/4 tsp. garlic salt
2 egg whites
1 lb. bonesless skinless chicken breast halves cut into 1-inch strips(about 3 breast)
Preheat oven to 450 degrees. Crush croutons, add parmesan cheese and rest of ingredients in large ziplock.
Whisk egg whites and water in a bowl.
Dip chicken strips into egg white and then into crumb mixture, coating evenly. Arrange on a stone or cookie sheet. Bake 14-16 minutes or until chicken is no longer pink in center. Serve with ranch dresssing. I serve with french fries.

Fresh Bone-in Chicken Breast $.99 lb.
The way I like these the best is on the grill. I season them with a little lawry's seasoning salt, then place on grill. When chicken is almost done, I brush with barbecue sauce. Serve with some seasoned fries. If you have left over chicken, take the chicken off the bone and use in another recipe or for chicken salad sandwiches. Serve chicken sandwich on a Flatout Flatbread wrap on sale for $1.77, Ruffle potatoe chips on sale for $2.97 or Frito Lay Scoops $1.99 and a Claussen Pickel on sale for $1.99 a jar.
T-Bone or Porter House Steak $5.99 lb.
This is a beef steak cut from the loin that includes parts of two delicious muscles: the top loin and the tip of the tenderloin (or filet as in filet mignon).
A T-Bone steak is almost the same cut as a Porterhouse but with a much smaller section of the filet attached. Because of this, the T-Bone steak is a little less tender than a Porterhouse. Cook a T-Bone steak the same way as a Porterhouse steak.
I season my steaks with salt and pepper, garlic, a little onion powder and steak seasoning, like Montreal steak seasoning. Make sure your grill is hot, sear the meat on both sides for about 2 minutes, then turn grill down and continue to cook to desired likeness, for medium rare 7-8 minutes.

I love fresh asparagus on the grill. I season my asparagus with garlic salt and then grill on the outer edge while my steak is cooking, it's delicious!

On sale this week
Boneless Beef Chuck Roast, that means french dip, oh, my family is going to love dinner. I know I have given you the recipe before, but this is worth repeating. If anyone has tried it, please post a comment, I would love to hear from you!
French Dip Sandwiches
3 1/2-4 lb. bonesless chuck roast
Completely cover with italian seasoning, heat frying pan thoroughly, add a couple tablespoons of olive oil, when oil is good and hot, sear meat on all sides.
Combine the following:
1/2 c. soy sauce (use a little less if it's a new bottle, it's stronger upon opening)
1 beef bouillon cube
1 bay leaf
3-4 peppercorns
1 tsp. dried rosemary
1 tsp. garlic powder
Place roast in crockpot and pour mixture over,then add water until liquid is to top of roast. Place on low. About a half an hour to hour before serving, pull roast apart with 2 forks.
I always buy fresh french rolls, warm them in the oven for about 10 minutes on 350 degrees or until just crunchy on outside. Place shredded meat on buns, serve with a little bowl of the drippings to dip sandwich in. I like to serve cheesy potatoes with it. It is so yummy and makes great leftovers, this is one thing that is just as good leftover as when freshly cooked.

Pork Sandwiches on a hard roll and chips. I made this sandwich from the Pork Loin roast that was on sale last week at Fareway. They turned out great. The Pork Shoulder Roast is on sale this week and I'm sure you could use that as well, it may even work better and is cheaper.

Pork Shoulder Roast on sale for $1.69 lb

Pork Sandwich recipe - in the crockpot, cooked on low all day.
Pork Loin Roast 4-5 lb.
1/4 c. sugar
2 tsp. paprika
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 tsp. onion powder
1 TBsp. worcestershire sauce
1/2 tsp. Tabasco or other hot pepper sauce
1/2 c. lemon juice
1 c. vinegar
1 c. water
Place pork loin in roasting pan(I cut the net off, if there is one). In a medium saucepan, combine sugar, paprika, salt, pepper, garlic powder, onion powder, worcestershire sauce, pepper sauce, lemon juice, vinegar and water; bring to boiling point. Spoon sauce over meat. I placed in crockpot and continued to spoon sauce over roast all day. (If using oven method, roast at 325 degrees for about 2-2 1/2 hours, internal temperature at 160 degrees, baste frequently)
When roast was cooked enough to pull apart, I used to forks and pulled apart so that meat was down in the juices. When ready to serve, I placed meat on a warm hard roll and topped with a little barbecue sauce on top of the meat.

Thindulge. I wanted to share with you about the Arnold Thindulge and how much we really like them and they are healthy and low cal!!!!! Thindulges have 5 grams of fiber, 100 calories and only 1 gram of fat and they are whole grain and yes, they do taste good. I use them almost daily for my husband's sandwiches and he really likes them. They are good for just a lunch meat sandwich, panini or in place of a hamburger bun.

Boneless pork country style ribs $1.79lb


2lbs. boneless ribs


3/4 bottle or homemade barbeque sauce


Hard Dinner rolls


1.Trim fat from ribs. Prepare grill, test for medium heat. Place ribs in foil and brush with some sauce. Grill for 1 1/2-2 hours. Remove ribs from grill and brush with remaining sauce.2. Slice thin, serve on rolls.


1 1/4" thick Bone-in Pork Chops $1.69lb.

Golden Pork Chops
6 pork chops
1/4 teaspoon seasoned salt
1/4 teaspoon freshly ground black pepper
1 onion, chopped
1/2 cup fresh sliced mushrooms
2 (10.75 ounce) cans condensed golden mushroom soup


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Rinse pork chops, pat dry, and season with seasoned salt and pepper. Place them in a 9x13 inch baking dish. In a separate small bowl, combine the onion, mushrooms and soup. Mix together well and spoon over the chops.
Cover, and bake at 375 degrees F (190 degrees C) for 45 minutes. Uncover, and bake for 15 more minutes. (Note: Time could be less or more depending on the thickness of the chops.) Pork chops are done when their internal temperature has reached 160 degrees F (70 degrees C).

Acorn or Butternut Squash $.59

Just a little secret I have learned, these things are hard to cut in half, so if you cook them in the micro for about 5-10 first, they are much easier to cut. You can actually cook them whole in micro and then I cut in half and add butter and brown sugar and sprinkle with a little nutmeg. It's almost like dessert! Great to serve with the pork chops. And brown sugar is on sale also, $1.19 2 lb bag.

I hope you didn't miss out on the $.89 pork steak, because it was delicious!

I updated with my own photo, I think it looks tastier than the other photo. I followed the recipe, except that I used fresh mushrooms, instead of canned, I just sauteed them slightly in a little butter. I didn't use any additional onion, like the recipe called for, only the dry onion soup mix. This recipe works great too, because it leaves a gravy in the pan perfect for mashed potatoes. The meat was really tender. It was really yummy!!!! And CHEAP!!!!!

ps. canned cream of mushroom soup(.59) and dry onion soup mix(.69 box) from Aldi, helps make this a very economical meal. The mushrooms were on sale at Fareway(.99 carton), I only used 1/2 of them. I figure I spent about $7.00 or under for this whole meal including the potatoes!

Pork sausage mild breakfast or italian is $1.49 lb.

I use 1/2 italian sausage and 1/2 hamburger in my spaghetti and it makes it so much better. I also have used this breakfast sausage and it's good and so much cheaper than the tubes.


Bone-in Pork steak this week is only $.89 lb. Wow! That's cheap meat, but I don't think I have ever tried this cut of meat, so I found a recipe that I am going to try, let me know if you try it and like it.
Mushrooms, 8 oz. $.79


Iowa Pork Steak
INGREDIENTS (Nutrition)
2 tablespoons vegetable oil
4 pork steaks
onion powder
garlic powder
salt and ground black pepper to taste
1 large onion, chopped
2 (4.5 ounce) cans sliced mushrooms, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10.75 ounce) can water
1 (1 ounce) package dry onion soup mix
1 tablespoon Worcestershire sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large heavy skillet over medium-high heat. Brown steaks for 3 to 5 minutes on each side. While browning, season both sides with onion powder, garlic powder, salt and pepper. Transfer steaks to a 9x13 inch casserole dish, and sprinkle with chopped onion and sliced mushrooms.
In a small bowl, combine condensed mushroom soup, water, onion soup mix and Worcestershire sauce. Mix until smooth, and pour over steaks. Cover pan with aluminum foil.
Bake in preheated oven for 90 minutes.


Wow! Hot dogs are $.49 for John Hormel hot dogs. Invite the neighbor kids and have a weiner roast!

Breaded Pork Loins 5/$5.00 These are good to pop in the oven for lunch.
Boneless Beef Arm Roast $2.39 lb
Red potatoes $1.99 lb.
Southwestern Pot Roast
8 small red potatoes, cut in half
3 lb. boneless arm roast
2 Tbsp. flour
1 lb. baby-cut carrots
1 jar (16oz) Old El Paso thick'n chunky salsa
Directions;
1. Place potatoes in slow cooker. Coat beef with flour, place on potatoes. Arrange carrots around beef. Pour salsa over all.
2. Cover and cook on low setting 8-10 hours
3. Remove beef from cooker, place on cutting board. Pull beef into serving pieces, using 2 forks. To serve, spoon sauce over beef and vegtables. 8 servings.


Boneless Skinless Chicken Breast $1.89 lb.

Italian grilled Chicken
3 TBsp. olive oil
1 Tbsp. lemon juice
1 Tbsp. Italian seasoning
1 tsp. garlic salt
1/4 tsp. black pepper
4 (6oz.) boneless skinless chicken breast
Directions:
1. Coat grill pan with non stick spray, or I used the grill.
2. Combine all ingredients in microwavable bowl. Microwave on high for 1 minute, stir.
3. Dip chicken in olive oil mixture to coat evenly. Place on hot grill(or grill pan)
4. Cook 4-6 minutes per side until juices run clear

Chicken Rollups with Fruity Couscous
1 lb. thin asparagus
1 Tbsp. olive oil
salt and pepper
1 Tbsp. apricot jam
1 Tbsp. lemon juice
6 skinless boneless chicken breast
1 cup couscous ( You find this next to the rice, it's much smaller and very fluffy when cooked)
2 carrots
2 Tbsp. mango or apricot (optional)

Directions:
1. Bring a skillet filled halfway with salted water to boil, add asparagus and cook for 2 minutes, drain and rinse with cold water, toss with 2 teaspoons of olive oil, season with salt and pepper
2.Cut 6, 12 inch pieces of cooking string (I didn't have any, so used shiskabob sticks)
Stir together jam, lemon juice, 1 teaspoon olive oil.
3. Pound each piece of chicken about 1/4 inch thick, season with salt and pepper, place skin side down on baking sheet.
Divide asparagus into 6 equal portions and place each portion clockwise in the center of the chicken cutlet. Roll up each cutlet and tie closed with the kitchen string. Brush the roll ups with the jam mixture and season with salt and pepper.
4. Transfer the chicken roll ups to grill, cover and cook, about 15 minutes.
5. Meanwhile, in a small saucepan, bring 1 1/4 cups of water and 1/2 tsp. salt to boil. Stir in couscous and carrots (and mango if you like) cover, turn off beat and let stand for 5 minutes. Fluff with fork and serve with chicken.
Sound difficult, but really it's not and I used shish ka bob sticks because I didn't have kitchen string, I just poked them through holding it all together, I'm sure kitchen string would work better.
Boneless Pork Shoulder Roast $1.69 lb.
Brown Sugar-Topped Pork with sweet-potatoes
4 medium sweet potatoes, peeled and cut into 1/2 inch slices
2 1/2 lb. pork boneless shoulder roast
1/2 c. packed sugar
1/4 tsp. ground red pepper(cayenne)
2 tsp. salt
1/4 tsp. pepper
1 clove garlic, finely chopped
1. Place sweet potatoes slices in slow cooker. Place pork on sweet potatoes. Mix remaning ingredients in small bowl, sprinkle over pork and potatoes.
2. Cover and cook on low heat setting for 8-10 hours.
3. Remove pork from cooker, place on cutting board. Remove strings or netting from pork. Cut pork into slices, or pull pork into serving pieces using 2 forks. Serve with sweet potatoes, spooining juices over pork. 8 servings.

Consumers have new reasons to enjoy almonds as researchers have recently announced that nuts not only taste good, but they're also good for you.

One teeny ounce of almonds contains 12 percent of your daily allowance of protein. And absolutely no cholesterol, of course. Dinner last night was meatballs, potatoe patties, acorn squash and zucchinni and tomatoe skillet special.


I know, you are asking what is potatoe patties???!!!!!

Well, they are a great way to use your left over mashed potatoes.

Works best cold, right out of the frig, just form into small patties.

Dip in egg

Roll in cracker crumbs

Fry in butter.

I like them topped with a little ketchup.

I hadn't had them since I was a kid, my Grandma use to make them and they are as good as I remembered.

Here is a photo of the Zucchinni and tomatoe skillet I have mentioned before.
Fry 3-4 pieces of bacon, drain the fat and set the crispy bacon aside.
Add sliced zucchinni to hot pan with a trace of bacon fat in. Add sliced onion.
When bzucchinni is browned, add 2 sliced tomotoes (or canned if you don't have fresh)
When warm throughout, sprinkle with your favorite shredded cheese, I use Montery Jack and sprinkle with a little garlic salt and oregano.
We are planning on some camping this week, so my menu has been formed around a campfire. But I did these some great deals in Fareway's ad whether you are camping or not. I thought I would let you know what my menu is though.
Saturday a.m. Muffins and coffee
lunch - Chili and peanut butter sandwiches
dinner - Hamburgers & sweetcorn
Dessert - Apple Crisp
Apples
3/4 c butter
3/4 C. dark brown sugar
1 1/4 c flour
1/2 c. quick oats
1 Tbsp. cinnamon
Sunday
Foil Breakfast
Place hashbrowns, eggs,(scramble egg mix) sausage and seasoning in foil and place on grill, could also do in skillet.
lunch - Bratwurst, cottage cheese and lays potatoe chips
dinner - Kabobs
Sirloin steak cut in cubes, place in ziplock baggie with italian dressing to marinade overnight. Soak skewers for 30 minutes in water. Chop vegatables in big chunks, peppers, cherry tomatoes, onion. Alternate meat with vegtables.
Dessert - Camp Pies
Butter bread and place face down on round pie iron. Add canned fruit pie filling. Put another piece of bread on toip of filling, with butter side out. Close iron tightly. Fry in campfire till nice and brown on both sides.
Monday a.m. Pancakes, Eggs and Bacon
lunch - Chili Dogs (using left over chili from Satuday lunch)
Have a great Labor day weekend!
Fill dutch oven with apples (peeled and sliced).
Combine brown sugar, flour, oats and cinnamon.
Cut butter into mixture.
Spread mixture over apples
Cover and cook about 45 minutes or until apples are soft
