Golden Pork Chops


I've posted this recipe before, but in case you need a good one for your pork chops, here it is.  It's easy and so good!

Ingredients

6 pork chops
1/4 teaspoon seasoned salt
1/4 teaspoon freshly ground black pepper
1 onion, chopped
1/2 cup fresh sliced mushrooms
2 (10.75 ounce) cans condensed golden mushroom soup

Directions
Preheat oven to 375 degrees F (190 degrees C).
Rinse pork chops, pat dry, and season with seasoned salt and pepper. Place them in a 9x13 inch baking dish. In a separate small bowl, combine the onion, mushrooms and soup. Mix together well and spoon over the chops.
Cover, and bake at 375 degrees F (190 degrees C) for 45 minutes. Uncover, and bake for 15 more minutes. (Note: Time could be less or more depending on the thickness of the chops.) Pork chops are done when their internal temperature has reached 160 degrees F (70 degrees C).

More chicken recipes


Creamed Chicken
1 c margarine
1/2 c flour
1 tsp. salt
1/2 tsp. black pepper
1 qt. hot milk
Chicken (cooked and shredded)
1 Tbsp. chicken granules or more to tast
Melt margarine, blen in flour, salt, pepper adn chicken base.  Cook until thick, stirring constantly.  Slowly add milk, bring to boil, stirring constantly. Add chicken heat through.  Serve over biscuits.

Easy Chicken & Cheese Enchiladas
1 can cream of chicken soup
1/2 c. sour cream
1 c pace picante sauce
2 tsp. chili powder
2 c. cooked chicken
1/2 c. Monterey Jack cheese
6 flour tortilla shells
1 small tomaote, chopped
1 green oniom, chopped
1. Stir the soup, sour cream, picante sauce and chile powder in a medium bowl
2. Stir 1 cup picante mixture, chicken and cheese in a large bowl
3. Divide the chicken mixute among the tortillas.  Roll up tortillas and place them seamside up in an 11x8 shallow baking dish.  Pour the remaining picante mixture over the filled tortillas.  Cover
4. Bake at 350 degrees for 40 minutes or until the enchilada are hot and bubbling.  Top with tomatoes and onion.

Asian Chicken Wrap
This recipe is pretty good, I was wanting something close to AppleBee's oriental chicken wrap.
Ingredients


1 whole cooked chicken or hindquarters, about 4 cups of shredded meat
2 red bell peppers
4 cups chopped romaine lettuce or slivered cabbage, if you like
1/2 cup vegetable oil
2 tablespoons red wine vinegar or apple cider vinegar
2 tablespoons peanut butter
1/4 cup soy sauce
1/2 teaspoon crushed red pepper flakes or 1 fresh jalapeno pepper, minced
1 teaspoon sugar
1 tablespoon fresh ginger, minced (or grated)
8 flour tortillas (10-inch)

Directions
1 Remove and discard the skin from the chicken.
2 Pull the chicken from the bone and shred the meat, with your fingers or 2 forks, into long shreds no more than 1/4 inch wide (this should go quickly; if it seems slow, just use a knife to cut the chicken into long, thin pieces).
3 Put the chicken in a large bowl.
4 Seed the peppers and cut them into long strips (similar to the chicken shreds).
5 Put them in the bowl along with lettuce or cabbage.
6 In a small bowl, combine oil, vinegar and peanut butter and use a whisk or fork to blend evenly.
7 Add soy sauce, red pepper flakes, sugar and ginger.
8 Stir to blend.
9 Stir the dressing into the chicken.
10 Taste and add salt and pepper if you like.
11 Warm the tortillas directly over a gas flame or in a dry skillet on an electric burner.
12 Warming each should take about 15 to 30 seconds.
13 Turn the tortilla over and over again until it is warm and pliable.
14 Stack and repeat until finished.
15 Divide filling among tortillas (about 1 cup each), placing filling in a wide strip a little below the center of the tortilla.
16 Fold each edge over the sides of the filling, then fold up the bottom and roll to enclose the filling entirely.
17 You can make these hours ahead, wrapping them tightly in plastic wrap.

Chicken Recipes using those cheap hindquarters


Mexican Casserole
9 Tortillas
Shredded chicken(1-2lbs)
Shredded cheese (mexican mix)
1 can ranch or chili beans
1 can cream of chicken soup
1 can Rotel tomatoes
1 pkg of taco seasoning
Cut tortillas in strips and use about 1/2 on bottom on 13x9 pan. Add meat and sprinkle with seasoning, spread can of beans on top, sprinkle with cheese, then rest of tortillas. Mix soup and tomatoes and pour over casserole. Sprinkle rest of cheese on top.  Cover with foil.  Bake at 350 degrees for 1 hour.

Chicken Tortilla Soup  (boil whole chicken use half of the meat for this and the other half for next recipe)

1 carton (32 oz) chicken broth

1 cup Old El Paso® Thick ‘n Chunky salsa
2 cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
3/4 cup crushed tortilla chips
1 medium avocado, pitted, peeled and chopped
1 1/2 cups shredded Monterey Jack cheese (6 oz)
2 tablespoons chopped fresh cilantro
Lime wedges, if desired

1. In 3-quart saucepan, heat broth, salsa and chicken to boiling over medium-high heat, stirring occasionally.

2. Meanwhile, divide crushed chips among 6 serving bowls. Spoon hot soup over chips, then top with avocado, cheese and cilantro. Serve with lime wedges

Coat Pork shoulder roast with Cookie's Pork seasoning, place in crockpot with just a small amount of water, cook on slow all day, pull apart with fork and serve on bun.

Homemade Pizza
Used Betty Crocker pizza crust or on sale or make your own;

Ingredients for Pizza crust

1 (.25 ounce) package active dry yeast
1 teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt
Directions

Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

Dessert  Candy bar topped Brownie's
Prepare brownie's according to directions on box, before you put in oven to bake, cut up your choice of 3 to 4 candy bars and layer on top of brownie mix.  Makes a great addition to your brownie.

Ham and Cheese Calzone



These was super easy and super good!
1 Philsbury Pizza dough
Ham (1/2 lb)
Ranch dressing
Pizza sauce
Shredded cheese (Colby & Monterey Jack)

Lay the pizza dough out on a slightly floured surface, cut into quarters

I then spread a little ranch dressing on half of the square(because you are going to fold them over)


I then added two slices of ham (more if you have a hearty appetite or meat loving men) then I spread some pizza sauce and topped with shredded cheese.
Next, I folded them over and pressed the ends together, laying them on a pan. 
Baked 400 degrees for 16-18 minutes.



And here is the finished product.  Yummy!

Corn and Shrimp Chowder



I made this delicious soup tonight.
4 slices of bacon, cut into 1/2 inch pieces
1 meduim onion, chopped
1 medium stalk of celery ( I left out)
6 small red potatoes, cut into 1/2 pieces
2 c frozen corn
1/4 tsp. dried thyme leaves
4 c chicken broth
1/4 c. Gold Medal Wondra, quick mixing flour (or flour with still work)
2 c half and half
12 oz uncooked medium shrimp, peeled, deveinded and tail shell removed (do not thaw, I cut mine in half or thirds even, I like a bite a shrimp with every spoonful)
1/2 tsp salt
1/4 tsp pepper

1. Fry bacon over medium high heat 5-6 minutes or until crispy, add onion, celery, potatoes, frozen corn and thyme.  Cook 5-6 minutes until onion is tender
2. Beat in broth and flour.  Heat to boiling reduce heat and turn to medium; cook about 15 minutes, until potaotes are tender and soup is slightly thickened (add more flour if not)
3. Stir in half and half, shrimp, salt and pepper; cover and cook 5-6 minutes or until shrimp is pink.

Serve with warm french bread.

Cheddar Cheese and Broccoli Soup
2 cans (10 3/4 oz each) condensed Cheddar cheese soup

2 cups water
6 cups Green Giant® SELECT® frozen broccoli florets ( I am using fresh)
2 cups milk
1/2 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 cups shredded Cheddar cheese (8 oz)

1. In 4-quart saucepan, mix soup and water. Heat over high heat, stirring constantly, until boiling and smooth.
2. Add broccoli. Heat to boiling; reduce heat to medium. Cover; cook 8 to 10 minutes, stirring occasionally, until broccoli is tender.
3. Stir in milk, mustard, salt, garlic powder and pepper. Cook uncovered 3 to 5 minutes, stirring occasionally, until thoroughly heated. Stir in cheese until melted.

Slow Cooker Macaroni and Cheese
I got this recipe from allrecipes.com and it is very yummy
Ingredients

2 cups evaporated milk
 1/2 teaspoon paprika
 1 teaspoon salt
 1 egg, beaten
 2 tablespoons butter
 3 1/2 cups cubed Cheddar cheese
 1 (8 ounce) package macaroni

Directions
Combine in slow cooker: evaporated milk, paprika, salt, egg, butter and cheese; stir. Cook on high for 1 hour.
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
Stir cooked macaroni into cheese sauce, reduce temperature to low and cook for 3 to 5 hours.

Fettuccine Alfredo with chicken
1 1/2 lb. fettuccine, uncooked
1 lb. chicken skinless bonelss chicken breast, cut into strips
1 1/4 c chicken broth
4 tsp. flour
4 oz. cream cheese
3 TBsp. grated Parmesan cheese, divided
1/4 tsp. garlic powder
1/4 tsp. pepper

Cook Pasta as directed on package
Heat Large non-stick skillet sprayed with cooking spray on med-high heat.
Add chicken; cook 5-7 minutes or until chicken is cooked through; remove from skillet
Mix broth and flour in same skillet
Stir in cream cheese, 2 TBsp. parmesan cheese, garlic powder and pepper, cook 2 minutes, stirring until mixture boils and thickens.  Stir in chicken
Drain pasta, place in large bowl.  Pour chicken mixture over pasta and toss to coat.  Sprinkle with remaining Parmesan cheese.

Dinner tonight



This is dinner tonight.  Okay, I give.  It is frozen Spaghetti sauce, left over!  When I make spaghetti sauce I make a big batch and cook it in the crockpot all day and then freeze what's left over and the next time I have it really easy!

Now my youngest son doesn't like spaghetti, his favorite food is steak.  So, I got these free through Schwan's last month, (remember me posting the link to getting a free $10 item from Schwan's, WORKED!)
(Also worked for them, because now I reordered them!)
My son, who loves steak (he's 8) liked these, they are small and individually packed, so real easy to thaw and cook quick.

I just saute them in a little olive oil in a pan and they only take about 5 minutes to cook
No, they are not good value, they are $9.99 a box and the box contains 8 steaks at 2 oz. each, so that makes them $1.25 each.  But for a quick meal, can't beat it.  I'm in search for a cheaper alternative, I may try Sam's.

Meatball Stone Soup


The Meatball soup was pretty good, but the next time I think I will tweek it a little by adding some of the spicy tomatoe juice that I use in my Tomatoe Rotini soup, spice up a little.  I'll try it in a couple weeks and let you know the results.
As for trying to make homemade French bread, it was a flop, again!  Uhg!!!!  Don't know what I am doing wrong.  But I will keep trying and adventurely get it right, I am determined!

Blueberries in the Snow



This dessert seems appropriate right now.
Blueberries in the Snow

Mix together
8 oz. cream cheese (softened)
1 container cool whip
1 cup powdered sugar
Mix together until smooth

Cut up angel food cake into cubes
You can make this ahead or buy the already made in store.  I happen to have some left over, so this worked out perfect for me.
Then layer,
Angel Food Cake
Cream Cheese Mix
Blueberry Pie filling (1 can)

I usually make 2 layers, but you can do as many or little as you like.  You could even place them in parfait glasses.

It even looks pretty when you get finished.

1 bag coconut (I use about 2/3 bag)
1 can sweetened condensed milk
Chopped pecan
Layer in cake pan in the order listed, refrigerate and then cut like cake.  We put a peice in our oatmeal in the morning and it makes it delicious.


I find it best to put my wafers in a ziplock and then crush by using a rolling pin, I kind of hammer it and then roll over the wafers.  I crush them until they are crumbs.

Add a little Spice or should I say

 we also add freshly ground cinnamon and nutmeg to our oatmeal, purchase the grinder spices and you will notice so much more flavor

I LOVE this coffee



I wanted to pass along this good coffee find to you, it may not be the cheapest, but it surely is good.  I like flavored coffee and my husband does not, so when he's not home to share the coffee pot, I treat myself to this.  Flavors I like the best are Chocolate Raspberry and Chocolate Caramel Brownie.  Oh Yummy.  The aroma is fantastic and it definatley is something that helps me get out of bed in the morning.  I buy it at Schuck's in Davenport, it is in bulk, you buy the amount you want, it is $9.99 lb.  Treat Yourself!
Coffee is said to get your endorphins flowing?

Breakfast Sausage from Aldi's



I'm pretty picky about my meat and usually won't purchase meat at Aldi's, but these breakfast sausage have passed the test.  I tried these microwavale sausage patties while our kitchen was under construction and we really liked them.  You pop them in the micro for 60 seconds and they are good, we actually prefer them over the Jimmy Dean ones.  Can't remember the exact price, but I think they were $3.49

Quick and Easy Minute Steaks were deliciuos



Quick and Easy Minute Steaks I posted a couple of days ago was delicious! and EASY!
I browned the minute steaks, sprinkling with garlic powder and pepper, then put them in a casserole and poured the French Onion Soup over, baked at 350 degrees for 1 hour.
Served with mashed potatoes and a jar of Beef gravy.
