Cauliflower Spinach Salad


Here is a recipe using several ingredients that are on sale at Fareway now.

Cauliflower Spinach salad
2 c cauliflower Sale $1.49 crown
1 can mandarin oranges, well drained Sale 2/$1
1/4 c chopped green pepper
2 large radishes  in the bargain cart .69 a bag
4 c torn fresh spinach  Sale $.99 bag
1 can evaporated milk
1/3 c orange juice concentrate

In a large bowl, combine the first five ingredients.  Pour milk in a small bowl; gradually whish in orange juice concentrate.  Drizzle over sald and toss to coat.  Serves 8-10.

Teriyake Pork Tenderloin
Pork Tenderloin Roast $2.69 lb.

Recipes

Steak & Linguine
8 oz. Linguine
3 c. broccoli florets
1 Tbsp. olive oil
1 garlic clove
1 lb. beef sirloin steak, slice
3 carrots
1/4 c Asian sesame dressing
1/4 c. teriyake sauce

Cook past according to package directions.
Add broccoli during last 3 minutes of cooking; drain.
Heat oil in large skillet; add garlic; cook and stir for 1 minute.
Add beef; cook and stir until browned.
Add remaining ingredients; cook for 2 minutes, stirring occasionally.
Add past and broccoli; mix well.

Fresh Herbed Penne with Chicken & Tomatoe
16 oz. Penne or Rotini
4 Tbsp. extra virgin olive oil
1 tsp. fresh chopped garlic
1 can diced tomatoes
1/3 c. fresh basil leaves (or dry is fine also)
1 (10-12 oz.) package of cooked chicken breast strips
1 1/2 c. shredded Mozzarella cheese
Salt and cracked pepper to taste

Cook past according to package directions.  Heat olive oil in large skillet over medium-high heat.  Add garlic and cook 1 minute.  Add tomatoes and basil; cook 2 minutes.  Add chicken; simmer for 5 minutes.  Toss with past and Mozzarella cheese.  Season with salt and cracked pepper.
Serve with Garlic Bread

Garlic Braised Beef with Potatoes and Broccoli (this roast has a fantastic flavor)
8 small red potatoes (1 1/2 pounds)
8 cloves of garlic
3 lb. round roast
1 envelope garlic and herb dry soup mix
1 can condensed beefy mushroom soup (Campbell's)
2 c. Broccoli

Place potatoes and garlic in slow cooker.  Place beef on potatoes.  Sprinkle with dry soup mix over beef; pour soup over all.
Cover and cook on low 8-9 hours
Remove beef from cooker, slice and place on platter with potatoes; meanwhile, steam broccoli.

Teriyake Pork Tenderloin ( I have not tried this yet, but I will this week, has great reviews

5 tablespoons low-sodium soy sauce
2 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons brown sugar
1 teaspoon ground ginger
1 teaspoon coarsely ground pepper
2 (1 pound) pork tenderloins

Directions
In a large resealable plastic bag, combine the first six ingredients; add pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight.
Drain and discard marinade. Place the tenderloins in an 11-in. x 7-in. x 2-in. baking pan coated with nonstick cooking spray. Bake, uncovered, at 425 degrees F for 25-35 minutes or until a meat thermometer reads 160 degrees F. Let stand for 5 minutes before slicing. Serve with pan drippings.

Nacho's

1 pound ground beef
1 onion; finely diced
salt and pepper to taste
2 cups shredded Cheddar cheese
1 (16 ounce) can refried beans
1 (14.5 ounce) package tortilla chips
1 fresh jalapeno pepper, sliced
Top with tomatoe, lettuce, black olive and sour cream

Directions

In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. After the meat is thoroughly cooked, drain off the grease.

Arrange chips on a microwavable platter. Spread beans over the chips. Layer with 1/2 of the cheese, the ground beef mixture, and remaining cheese. Arrange jalapeno peppers on top.

Microwave on medium-high until cheese has melted. Serve immediately.
 
Taco Salad
1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
1/2 (14.5 ounce) package nacho-flavor tortilla chips
2 cups shredded Cheddar cheese
1/2 (15 ounce) can kidney beans, drained
1/2 cup ranch-style salad dressing
chopped tomato
chopped lettuce
chopped green onion


Directions
Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

Banana Bread

Banana Bread
1 c sugar
1 stick margarine or butter
2 eggs
1/4 c buttermilk
1 tsp. soda      Add the baking soda into buttermilk
2 c flour
1 tsp. vanilla
3-4 ripe banana's

I used my mini loaf pan instead of a big loaf, it cut the baking time and I didn't have to worry about it now getting done in the middle and they work perfectly frozen, you can pull out a couple at a time!

I've so busy baking, I haven't been updating my site very well. 

I did get the add and not a lot stuck out to me, so I have been using a lot of stuff from my freezer.  But if I were needing groceries, here is what I would buy and plan for meals.

BBQ Chicken in the Oven


I put those chicken hindquarters to good use last night by making BBQ chicken, mashed potatoes and corn.

Classic BBQ Chicken  (BBQ sauce reipe below)
1. Season chicken with salt and pepper and brown on stove top.
2. Prepare BBQ sauce.  In large saucepan, melt butter.  Add onion, garlic and salt.  Cover and cook over low hear until onion is tender.  Add crushed red pepper, paprika, chili powder and black pepper, cook and stir for 1 minute.
3. Add water, vinegar, brown sugar and Worcestershire sauce, bring to simmer.  Stir in molasses. Whisk in tomatoe paste until smooth.  Bring to a simmer over low heat, cook, uncovered for 10-15 minutes or until sauce thickens, stirring occasionally.
Reserve 1 1/2 cups
4. Preheat oven to 325 degrees.  After you have browned chicken in sautee pan until well browned, place skin side up in baking pan.  Spoon the reserved BBQ sauce over the chicken and cover tightly with foil.  Bake about an hour or until you notice the bone on the legs becoming visable.
5. Turn up the oven to 450 degrees, baste with extra BBQ sauce and continue baking for another 10-15 minutes.

BBQ sauce
1/2 c butter
1 c onion, finely chopped
1 Tbsp. garlic
2 Tbsp. kosher salt
1 1/2 tsp. cruched red pepper
1 Tbsp. paprika
1 Tbsp. chili powder
1/2 tsp. black pepper
2 c. cold water
1 1/4 cups cidar vinegar
1 c packed brown sugar
2 Tbsp. Worchestershire sauce
1/4 c molasses
1 c tomatoe paste

I used instant mashed potatoes and seasoned with garlic salt.

Cream corn
1 bag frozen corn
4 oz. cream cheese
4 Tbsp. butter
Melt in microwave on high until hot.

I had quite a bit of sauce left over, so you can either half the recipe or I froze the remaining and now it will ready for the next time I make this recipe.

Turkey makes cheap meals all week


Last week for some reason I never recieved my Shopper with my Fareway ad and the one online didn't seem to have anything real impressive.  So, I roasted a turkey, you know one that I had in the freezer from a previous sale of $.49 a pound.  So, here was my menu last week, and my family had no clue they were eating leftovers all week!!!!!  Fooled them!

Sunday - Turkey, dressing, mashed potatoes and gravy, corn and rolls

Monday - Golden Pork chops and mashed potatoes (left over mashed potatoes, pork chops from previous week sale)

Tuesday - Turkey Tortilla Soup  and Turkey Panini's (better known as Chicken tortilla soup, I just substituted turkey instead chicken)

Wednesday- Enchilada's (Turkey Enchiladas)

Thursday - Broccoli cheese soup and turkey panini's

Friday - Turkey Salad sandwiches (yes, same as chicken salad) For lunch.

Wow, what a cheap week on the grocery bill and no one knew they were eating leftovers the whole week.  I roasted a 15lb turkey which cost me $7.35 and the only other meat I used was pork chops.  And my preperation was so easy, no meat to cook.

I got this Kitchenaid Mixer for my Birthday!


I finally got it, a Kitchenaid mixer.  Now I have turned into a baking fanatic.  My husband should be losing weight instead of gaining, but with the way I'm shelling out bakegoods, the diet's not looking too good.
I have used it atleast once every day since I got it.  Let's see, Cinnamon rolls, biscuits, 2 different cookies, a cake, mashed potatoes and now sticky buns today.  Oh, and I got the icecream attachment and made vanilla icecream yesterday.

Breakfast in 3 minutes!


My kids love to get McDonald's breakfast, but I can match that biscuit with egg and sausage, here's how to do it, but much cheaper.  It will only take 3 minutes and a microwave, little mess and yummy!
Here's what you need
1 sauasage patti (aldi's sausage)
1 egg
margarine
milk
cheese slice
biscuit (already baked)
a small measuring glass or bowl (that the bottom would be about the size of your biscuit)

I cook the sausage patty first, lay on paper towel and cook for 1 minute in microwave

Then melt about a tsp. of margarine in a small dish for 10-15 seconds

Stir in 1 egg, about 2 Tbsp. milk and microwave for 40-45 seconds

Now you have your perfect egg patty for sandwich

(sorry this picture didn't turn out so well) Cut open your already cooked biscuit and lay a peice of cheese on top, microwave for 10-15 seconds or until melted or soft

Then lay sausage and then egg on top and have your McDonalds bicuit, only cheaper!~
