2 1/2 c. Old fashion oats (not quick oats)
3/4 c. wheat germ
3/4 c. brown sugar
1/2 tsp. salt
1 tsp. lemon or orange zest
1 tsp. vanilla or almond extract, cinnamon or nutmeg
1/2 to 1 c. chopped nuts
2 TBsp. cooking oil
1/2 c. honey (or agave nector)
6 TBsp. water, divided
Combine in a large bowl: oats, wheat germ, brown sugar, salt, nuts.
Cook to boiling in small saucepan: 2-3 Tablespoons water, honey and oil.
Add spices, zest and extract flavorings.
Reduce heat and simmer 3 minutes.
Pour over oat mixture. Toss to coat.
Sprinkle onto sprayed cookie sheet.
(keep mixing bowl handy for later)
Remove from oven and cool a few minutes.
Return mixture to original mixing bowl.
Add 2-3 Tablespoons water, remaining honey mixture. Toss to mix.
Sprinkle onto cookie sheet.
Bake 15 minutes at 325. Cool
Store in airtight container
